雞蛋有營養又好吃,也可以煮蛋花湯!蛋花湯食材配搭多變,可按體質選擇合適食材,例如番茄健胃消食、豆腐生津潤燥、紫菜清熱化痰、味噌補中益氣等。蛋花湯看似簡單,但要雞蛋做到如雲絮般軟嫩,可以留意以下小秘訣:
- 蛋黃蛋白先攪拌均勻
- 蛋液中加少許生粉水拌勻
- 將蛋液加入鍋前先轉小火
- 將蛋液加入湯後不斷攪拌令蛋花更均勻
- 蛋花半凝固時熄火,能保持其嫩滑質感
蛋花湯好煮意:
紫菜蝦皮蛋花湯
紫菜 — 清熱化痰、利尿,亦可消暑解熱、消除疲勞,增強記憶力。
蝦皮 — 補腎、壯陽、通乳,因為連殼食用亦可補充鈣質。

Different ways to prepare egg drop soup
Since eggs are nutritious and delicious, can we use them to make soup? Of course! We can use them to make egg drop soup!
We can make different types of egg drop soups by mixing it with different ingredients based on our body constitutions. For instance, tomatoes can strengthen the stomach and aid digestion, tofu can induce salivation and moisten the body, seaweed can clear the heat and reduce phlegm, and miso can nourish the qi.
Egg drop soup might seem like a simple dish, but to ensure the egg is fluffy, do note of the tips below:
- whisk until the yolks and whites are blended
- add a little cornstarch water into the mixture and continue to stir well
- before adding the mixture to the pot, make sure to reduce to low heat first
- add the mixture into the pot and continue to stir well
- once the mixture turns half opaque, turn off the heat to ensure its fluffiness
Some creative ways to prepare egg drop soup:
Seaweed and dried shrimp egg drop soup
Seaweed - clears heat, reduces phlegm, induces urination, relieves summer-heat, clear toxins, relieves fatigue, and strengthens memory.
Dried shrimp - nourishes the kidney, promotes lactation; when eaten with its shell, can replenish the calcium the body needs.
Tomato and tofu egg drop soup
Tomato - promotes fluid promotion, quenches thirst, strengthens the stomach, aids digestion, cools blood and calms the liver.
Tofu - nourishes qi, relieves qi stagnation, promotes fluid production and relieves dryness.
Meshed winter gourd and shrimp egg drop soup
Winter gourd - clears heat and dispels summer-heat, promotes urination.
Shrimp - nourishes the kidney, promotes lactation
Miso and pork egg drop soup
Miso - replenishes vital energy and qi, nourishes heart and kidney.
Pork - nourishes yin and moistens muscles, nourishes the kidneys and stomach

去「油膩感」湯水,拒絕做油膩大叔!
在你印象裡,典型中年男人是怎樣的?中年發福?啤酒肚?髮線後移?除了地中海發光發亮,有些連面也油油的⋯⋯男人中年都一定會變成這樣嗎?
隨着年紀增長,新陳代謝減慢,如食量與年輕時不變,當然容易變胖。而從中醫角度來看,肝、脾、腎虛弱都會引致中年男士害怕面對的問題:肝血不足腎氣虛,頭髮容易變白或脫落,脾虛濕盛則容易變胖、水腫、疲倦不願動。至於面油問題則是濕熱體質人士的症狀,他們怕熱又易出汗,汗液比較黃而多帶有臭味。肝脾腎需慢慢調理,先解決濕熱問題吧!飲食宜清淡,多吃祛濕食物如薏米、赤小豆、綠豆、苦瓜等;避免喝咖啡、奶茶、啤酒;減少油膩感,人都精神一點。
食材小貼士:
茯苓性平,有利水滲濕、健脾安神的作用,適合各種體質人士。
節瓜荷葉薏米花生湯
功效:清熱利濕,消腫減肥,紓緩身體四肢困重、肥胖等症狀。
材料:節瓜2個、荷葉30克、乾海帶約60克(或新鮮海帶一塊)、生薏米30克、茯苓15克、赤小豆40克、花生30克
做法:
1. 所有材料洗淨,乾海帶泡水備用,節瓜去皮切大塊備用。
2. 鍋中加入2500毫升水,放入全部材料,武火煮至水滾,調文火煮1.5小時,最後下鹽調味即可。

Soup to eliminate ‘greasiness’, avoid being an oily middle-aged man
Do you have the impression that all middle-aged men look the same? They have become plumper, with a beer belly and a receding hairline. Besides experiencing balding at the crown, some of their faces look oily too. Do all middle-aged men really look like this?
As we age, our metabolism reduces. If we still maintain the dietary habits that we had in our youth, we can gain weight easily. From the perspective of Chinese Medicine, weakness in the liver, spleen and kidneys is the primary cause for middle-aged men’s problems.
The lack of blood in the liver and the weakness of qi in the kidneys would cause hair to turn gray or drop easily. Weakness in the spleen and the accumulation of dampness in the body can cause us to look plump, experience fatigue and water retention. As for individuals with oily faces, that is related to damp heat body constitution. They have aversion to heat and sweat easily, and their sweat would leave a yellow stain with a bad odor on their clothes.
It is important to care for the liver, spleen and kidneys. Since we are in the summer season, let us solve the damp heat problem first! Start by eating a lighter diet and consume ingredients that can dispel dampness from the body, such as coix seed, rice bean, green bean, and bitter gourd. Avoid drinking coffee, milk tea, and beer. By cutting down on greasy food, we should become more energetic.
Tip on the ingredients:
Poria with hostwood is mild in nature. It helps to promote diuresis, dispel dampness, strengthen the spleen and calm the mind. Suitable for all body types.
Hairy gourds and lotus leaf soup with coix seeds and peanuts
Effects: Clears heat and dispels dampness, reduces swelling and aids weight loss. Relieves heaviness in body and limbs, obesity.
Ingredients:
2 hairy gourds, 30g lotus leaf, 60g dried seaweed(or 1 piece of fresh seaweed), 30g coix seeds, 15g poria with hostwood, 40g rice beans, 30g peanuts
Preparation:
1. Rinse all ingredients thoroughly. Soak the dried seaweed. Cut the peeled hairy gourds into pieces.
2. Combine all ingredients with 2500ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 1.5 hours. Add salt to taste.

【Michelin 2* Cuisines Michel Troisgros, Hyatt Regency, Tokyo】 There’s a few interesting Vegetables based dishes or sauces happening. If anything the current gen of Chefs in Cuisine(s) Michel Troisgros seemed to enjoy playing between Sour, Sweet & Savory senses this visit, despite the original Troisgros protege having moved to equally 2* Esquisse Tokyo. I am actually glad I didn’t ordered more Wine for pairing as the flavors jumped around quite a bit.. 🤔

Amuse Bouche 1
• Radish with Passionfruit jelly & Nori Seaweed
Powder
• Fried Brown Rice with Curry
• Prawns Cream Tartlet with Chilli Powder
• Wine: Jerome Chezeaux Nuits-Saint-Georges 2013
• House made Pain de Campagne, Brioche roll with Hokkaido Butter & French Sea Salt
Amuse Bouche 2
•Caramelised Slow Roasted Melon
•Iwashi Sardine smoked with Cherry Blossom, Japanese Cucumber, Yoghurt & White Almond
•Salt Baked Pineapples, Semi-Dried San Marzano Tomatoes, Hokkaido fresh Cream Cheese, Herbs salad & Olive Powder
•Smoked かつお Bonito, Fennel & leaves, Olives, Paprika Pumpkin & Honey Lemon sauce with Sicilian Flavors. Both these to me were more on the Southern-East France accent side, if not even Italian summery side! Unfortunately there wasn’t much Bonito taste with this treatment ..
•Poached Game Fowl breast, with two types of Zucchini, Vinegar, Vegetables & Beef Bouillon, Tomato & Hazelnut. Sweet & Sour taste.
•Pre-Desserts of Cherry Jus, Vanilla & Tonka beans Ice cream & White Chocolate lollipop Bon Bon.
•Roasted Corn Tea which was quite salty 🌽 , more like a Savory palate cleanser acting instead of MugiCha today!
•Peach & Ume Macaron, and a Chestnut Tart with Framboise (Non-Pictured)
Cheese Platter with European & local Japanese cheeses, pretty enjoyable:
•Piacentinu Ennese DOP Sicily, Sheep’s Cheese with Saffron & Pepper
•Sakagura Sake Ferment Washed Cheese from Hokkaido Tokachi
•Brebis du Lavort Sheep’s Milk Cheese, a Troigros family related revived cheese in French Auvergne region
•Unpasteurized French Cow’s milk Epoisse Cendré with Charcoal Powder & White Pepper
•Italian Occelli Sheep’s & Cow’s Cheese with Malted Barley & Whisky
With a Peach, Jam & Fig condiments
•Sour Milk & Ice Shavings, Eggplant Purée, Kurumi Walnut Miso, Almond Gelee, etc.
•Dessert Salad of Peach Mousse & Peach Jelly, いんげん豆 Green String Beans, Corn Flour crisp & Lemon Balm ice cream. Espresso with Wasabon. I think this last dessert summed up this visit of Cuisines Michel Troisgros Tokyo - there’s always some elements of savouriness, sourness & possibly sweetness elements during any part of the meal. For me this dish was interesting but didn’t feel like a finishing dish to me. I mean if they had at least Dehydrated or Caramelized the Ingen beans to lift up the sweetness then perhaps... don’t forget perfumed Lemon Balm when concentrated already feels like walking past an Aesop or Neal’s Yard shop, and then you still add a grassy element on top. The Peach component should have stood out much much in my opinion. Full Lunch Tasting Menu ¥16,632 or ¥20,700 Yen with 1 Glass Wine.

10 grams unsalted butter
50 grams corn syrup
20 grams honey
20 grams Japanese cheese powder
20 grams Tonardo cheese powder
(*) You can substitute the cheese powder with 40 gr Parmesan and Cheddar finely grated, or any other types of cheese to your preference.
(2) SALTED EGG & SEAWEED CASHEW NUTS
500 grams cashew nuts
100 grams granulated sugar
100 grams water to make caramel
20 grams unsalted butter
5 grams dried seaweed, finely ground
8 salted egg yolks (can be bought from Asian groceries)
