Hello everyone :) Today we’re going to show you how to make melt-in-your-mouth Snowball cookies.
Whether you call them Russian tea cakes, Mexican wedding cookies or snowballs, there’s no denying that they’re incredible delicious and melt in your mouth and all for holidays.
Snowball cookies is one of my favo holiday cookie. And I miss it when the weather become colder. This delicious cookies are made with almond flour, chopped walnuts, and flour, then rolled into a ball-size and dusted with powdered sugar.
This snowball cookies recipe is suitable for a starter, it’s very easy but tasty. Christmas is coming soon. Why not bake some snowball cookies to be a gift for your family and friends. Hope your enjoy this video :)

Homemade Snowball Cookies Recipes
☞ this recipe can make 21-24 cookies
✎ Ingredients
unsalted butter, softened 52g
cake flour 58g
almond flour 22g
powdered sugar 15g
walnut 15g
powdered sugar for rolling and dusting
✎ Instructions
1. Place walnuts on the cutting board, then finely chopped.
2. Heat a pan over medium low heat, add chopped walnuts and stir frequently for 1 minute. Transfer to bool.
3. In a mixing bowl, cream butter.
4. Add powdered sugar and mix well.
5. Sifted flour and almond flour, mix until well blended.
6. Pour chopped walnuts into the bowl with the dough, mix to incorporate.
7. Scrape the dough onto a plastic wrap and place in the refrigerator for at least 30 minutes.
8. Cut the dough into 21~24 pieces, each weights 6.5~7g, roll the dough into a ball-sized.
9. Preheat the oven to 160˚C, bake for 16-18 minutes, until the bottom of the cookies is slightly brown.
10. While the cookies are still warm, roll into powdered sugar and let it cool.
11. Sift powdered sugar oven the cookies, enjoy!

With Christmas around the corner, here’s a colorful starter that’s not only tasty but healthy to boot! For those unaware, couscous is a fibre-rich item that is largely fat free has been trending and popular in the in various parts of the world.
We used chicken thighs for their flavour, and marinated with melted butter, dijon mustard, honey, salt, and left it overnight (or 4 hours depending). With that out of the way, you prep the oven and roast the meat, then the pumpkin. We used San Remo CousCous, made of durum wheat milled into fine semolina, as not only is it a good source of fibre, it is also easy to cook. After mixing, add in cranberries, pistachios, and mint leaves - finish it off with feta cheese and pomegranate seeds and mix.
Festive salad is now ready and good to serve for the family!

1) 1kg of pumpkin, roasted, peeled and cubed – 260Cals
*Option: Any other winter squashes.
2) 1 medium Yellow Onion, diced – 40Cals
3) 3 Garlic Cloves, minced – 15Cals
4) 1 tbsp Fresh Ginger, minced – 6Cals
5) ½ cup Coconut Milk – 267Cals
6) 3 cups Vegetable Stock – 45Cals
7) 1 tbsp. Olive Oil – 119Cals
8) 1 tsp. Curry Powder – 6Cals
9) ½ tsp. Cumin – 4Cals
10) ½ tsp. Turmeric – 4Cals
11) 1 tsp. Coriander Seed – 5Cals
12) 1 tbsp Fresh Lemon Juice – 3Cals
13) Salt & Pepper to Taste
Per Serving - 130.5Cals
CREAMY MUSHROOM SOUP (Serves 6)
1) 500g Fresh Wild Mushrooms, thinly sliced – 90Cals
2) 3 cups Cauliflower, coarsely chopped – 82Cals
3) 1 large Yellow Onion, diced – 63Cals
4) 1 tbsp Olive Oil – 119Cals
5) 3 Garlic Cloves, minced – 15Cals
6) 4 cups Vegetable Stock – 60Cals
7) 1 tbsp Fresh Lemon Juice – 3Cals
8) Salt & Pepper to Taste
Per Serving - 72Cals
BLACK BEAN & SWEET POTATO SOUP (Serves 4)
1) 1.5 cups Sweet Potato, peeled & diced into cubes – 171Cals
2) 1 can (15oz) Black Beans, rinsed & drained – 350Cals
3) 1 medium Yellow Onion, diced – 40Cals
4) 2 Garlic Cloves, minced – 10Cals
5) 1 tsp. Olive Oil – 40Cals
6) 1 tsp. Cumin – 8Cals
7) 1 tsp. Smoked Paprika – 8Cals
8) 1 tsp. Coriander Seed – 5Cals
9) 2 cups Vegetable Stock – 30Cals
10) Salt & Pepper to Taste
Per Serving - 165.5Cals
**You may add more vegetable stock depending on how thick you want your soup to be.
To avoid overindulging this holiday season and to keep the weight, include soups into your meals. Serve it as a starter for lunch or dinner or have it as an afternoon snack.
