自養酸種❤︎ 香草蕾絲歐包~成形篇 Sourdough Dill&Cumin Lacy loaf
這次利用香草葉來做為歐包表面的造形,所以將香草葉放在發酵籐藍的底部,直接將麵團壓在上面,這樣烤出來的麵包表面就會烙印葉子的花紋。成形時要注意表面的張力,所以我一般在麵團放入籐籃後再收口一次。
I placed some fresh dill on the bottom of the banneton and then put the dough on top of it. The leaves will be seared on the surface of the bread just like getting tatto on the skin. I like to do the stitching in the banneton in order to get more tension on the top.
