西班牙飯就是要有番紅花
初產婦:「我懷孕3個月,最近吃了西班牙海鮮飯,聽說番紅花會導致滑胎,我好擔心。」
CheckCheckCin:很多人都是從西班牙海鮮飯認識番紅花(Saffron)這種香料,它是番紅花雌蕊部分,經過人手採摘製成香料。從中醫角度來看,番紅花性溫,有活血通經、去瘀止痛的功效,適合血瘀體質、閉經、月經過少、產後惡露不下人士食用,由於有活血功效,懷孕及月經期間都不宜吃。至於滑胎之說,電視劇裡的人摸到或喝一口番紅花湯就胎兒不保,都是誇張的戲劇效果,一般需要高劑量服用才對胎兒有影響。煮一鍋西班牙海鮮飯用到的番紅花份量非常少,不用過份擔心。
番紅花 — 性溫,有活血通經、去瘀止痛的功效,適合女性血瘀痛經、閉經、月經過少、產後惡露不下者食用,亦適合跌打損傷、血瘀腫痛者食用。孕婦忌吃。
西班牙海鮮飯
材料:大蝦6隻、蜆半斤、青口6隻、帶子6隻、魷魚1隻、西班牙米(或意大利米)200克、雞湯500毫升、洋蔥半個、番茄1個、紅椒1隻、蒜頭(磨蓉)2瓣、番紅花7-8條、甜椒粉(Paprika)1茶匙、檸檬1個
做法:
1. 材料洗淨,魷魚切件;洋蔥、番茄及紅椒切粒備用。
2. 準備一個薄身平底鑊,燒熱下油,加入蒜蓉、洋蔥及甜椒粉炒香,加入番茄粒及紅椒粒炒勻。
3. 加入雞湯及番紅花,加入西班牙米鋪平,用大火煮3分鐘。
4. 除蜆以外,在飯上面鋪上海鮮,大火煮10分鐘,加入蜆,調至小火煮7分鐘至海鮮熟透,熄火。
5. 檸檬切角放在飯面即成。

Spanish Paella should have Saffron
“I am three months pregnant but had recently eaten Spanish seafood paella. I heard saffron can cause miscarriage, and I’m really worried now.”
Many people got to know about a spice called saffron from the Spanish seafood paella. It is the pistils from the flower called saffron crocus, and had been harvested and processed to become a type of spice.
From the perspective of Chinese Medicine, saffron is warm in nature, can invigorate the blood and activate the Meridians, clear stasis and relieve pain. It is suitable for individuals with stasis condition, the amenorrhea and oligomenorrhea problem, and those with postpartum lochia. Since saffron can invigorate the blood, it is not suitable to be eaten during pregnancy or menstruation.
Certain drama series would depict how a person would suffer a miscarriage right after consuming the saffron soup or even touching the spice itself. This is merely for dramatic effect. It would actually take a high dosage of saffron to see a significant impact on the fetus. The use of saffron in Spanish seafood paella is minimal, hence, there is no need to worry.
Saffron – warm in nature, can invigorate the blood and activate the Meridians, clear stasis and relieve pain; suitable for individuals with stasis condition, the amenorrhea and oligomenorrhea problem, and those with postpartum lochia; also good for individuals with injuries and swelling. Pregnant women should avoid eating.
Spanish Seafood Paella
Ingredients: 6 prawns, 300g clams, 6 mussels, 6 scallops, 1 squid, 200g short grain rice, 500 chicken stock, half onion, 1 tomato, 1 red sweet pepper, 2 cloves of pounded garlic, 7-8 saffron, 1 teaspoon of Paprika, 1 lemon
Preparation:
1. Rinse all ingredients thoroughly. Slice squid. Chop onion, tomato and sweet pepper.
2. Heat the pan with oil, add garlic, onion and paprika. Add chopped tomato and sweet pepper.
3. Add chicken stock and saffron, add short grain rice and cook with high heat for 3 minutes.
4. Add seafood (except clams) to the rice, cook with high heat for 10 minutes. Add clams and cook with low heat with 7 minutes until the seafood cooked. Add lemon to serve.

CLASSIC FRENCH MUSSELS
法式忌廉白酒煮青口
材料: (2servings)
新鮮青口 1kg
紅蔥頭Shallot 2個切碎
蒜頭 4粒切碎
白酒 1cup
忌廉Whipping cream 0.5cup
無鹽牛油 4tablespoon
橄欖油 3tablespoon
新鮮番芫荽Parsley 小撮切碎
鹽 適量
黑椒 適量
*法包切片伴碟
How to cook?
1.中小火將橄欖油及牛油落鍋加熱
2.加入紅蔥頭及蒜頭爆香(3分鐘)
3.加入青口及白酒,煮約10分鐘至青口開口及酒精味蒸發掉
4.加入忌廉, 番芫荽, 鹽及黑椒調味
5.攪拌2分鐘就食得!
Tips:
1.新鮮青口同冰鮮青口有好大分別肉質鮮甜嫩滑,在大型鬼佬超市有售(約$250)
2.好多人唔知煮食白酒點揀,
選酒要dry同冇咁酸的, 唔係會搶哂個汁d味

Preparation:
1. Heat up a frying pan, add some oil. Stir fry with pork slices and leek to enhance flavors.
2. Add Korean soy sauce, minced garlic and minced ginger and Korean fine chili powder.
3. Stir fry with cabbage and onion. Then add 600 ml of water and bring to boil.
4. Add carrot, prawns, abalone and mussels until almost fully cooked.
5. Seasoning with oyster sauce, salt and sugar.
6. Add shiitake mushrooms, green pak choy, squids and ground black pepper.
7. Put the cooked noodles into a noodle bowl. Add seafood and soup to finish.
Enjoy.
韓式炒碼麵 Korean Spicy Seafood Noodles 짬뽕
材料A:
水...............................600ml
豬梅肉片(切絲).........120g
藍青口........................8隻
蝦...............................4隻
鮑魚(鎅花).................2隻
魷魚(切細).................1隻
鮮冬菇........................2隻
小棠菜........................2棵
韭菜(切段) ................2棵
椰菜/高麗菜(切塊).....3片
大蔥(切細).................1棵
洋蔥(切絲).................1/2個
甘荀(切片) ................1/4個
材料B:
蒜蓉...........................5瓣
韓國幼辣椒粉...........1.5湯匙
韓國醬油...................1/2湯匙
薑蓉..........................1/2茶匙
調味料:
蠔油.......................... 1/2湯匙
鹽.............................. 1茶匙
糖.............................. 1/2茶匙
黑胡椒粉................... 1/4茶匙
做法:-
1. 熱油鍋下豬梅肉絲、大蔥爆香成蔥油,然後從鍋邊下材料B之韓國醬油,蒜蓉和薑蓉下鍋炒香,再下韓國幼辣椒粉炒勻。
2. 洋蔥、椰菜/高麗菜下鍋炒勻注入600ml水燒開,把調味料之蠔油、鹽、糖下鍋拌勻。
3. 甘荀、蝦、鮑魚、藍青口下鍋煮至八成熟,然後下鮮冬菇、小棠菜煮開,最後下魷魚燙熟,加入調味料之黑胡椒粉入鍋。
4. 把麵條煮熟放在碗裡,然後加入海鮮湯、韭菜便可。
