原食材總量507 g 放在1720ml 日式一斤吐司模中. 這是剛烤好水氣尚未完全蒸發的重量. 等冷掉會再少幾克. 我在烤焙時大概放了至少5分鐘的蒸氣. 不知道是不是這個緣故. 否則這種吐司的燒減率應該在15%上下.
承上一個影片因為有人覺得有加麵筋的質感. 我得聲明一下. 加麵筋我一定會說. 因為這是實驗. 我對於加麵筋還沒有很熟悉. 所以那對我來說算是一個變數. 等我的孔洞出來後. 再來利用不同全麥全穀粉時. 有可能就會加麵筋來支撐. 一般來說. 我的吐司都是在整體12%左右的麵筋去處理. 也很少加蛋. 一般使用10~20%的小麥及斯佩爾特全麥. 搭配我慣常使用的12.8%Weizenmehl 405 是我比較常做的搭配. 或是30% Weizenmehl 1050 搭配 上述的Weizenmehl 405 ( 斯佩爾特也是. 但會減少水量)

100g raisin
300g water
Instructions:
1. put raisins and water into a glass jar.
2. let it ferment at room temperature.
3. shake the jar 1 - 3 times a day to prevent mold.
4. it usually takes about 7 days.

3、水と小麦粉を加え、よく混ぜ合わせます。
4、二倍に膨らむまで発酵させます。
5、水と小麦粉を加え、よく混ぜ合わせます。
6、二倍に膨らむまで発酵させます。
7、冷蔵庫で保管します。

Ingredients:
550g bread flour
300g water
100g dough starter
20g oil
20g sweetener
5g salt
Instructions:
1. put everything together in a bowl and knead well.
2. let it ferment until it doubles in volume.
3. divide the dough into 2 pieces, put them in a bread tin.
4. let it ferment until it doubles in volume.
5. bake at 350F/180C for 30 to 40 minutes.

5、180℃で30〜40分ほど焼きます。
