Here's another #mamahack : Ella Grace requested for this for dinner and I made an extra big batch so I could have leftovers for lunch! 2 birds 1 stone!

BOWTIES & VEGGIES

1/2 butternut squash, cubed
2 packages bunashimeiji mushrooms, chunked
1 bulb garlic, separated but no need to peel
1 red onion, quartered
1 handful cherry tomatoes
1 bunch asparagus, trimmed
2 bunches fresh sage
1/2 lemon, juiced
1 package squid ink bow ties, cooked and drained
1/2 stick salted butter**
1 small package marinated feta in herbs and olive oil

1. Preheat oven to 400f/200c.
2. Toss veggies w oil from feta and season w salt and pepper.
3. Roast butternut squash, garlic cloves, mushrooms, red onions and 2 sprigs of sage leaves for 45 mins.
4. Toss in asparagus and cherry tomatoes and roast for 15 more minutes.
5. While veggies are roasting, boil pasta. In a little sauce pan, melt butter and fry remaining sage leaves on medium low heat until butter is browned and leaves are crisp.
6. Toss browned butter, lemon juice, pasta, veggies together and top w feta and crisp sage leaves.
Serve immediately!
***If not going meatless for teeny tiny, you can boil some shrimp or chicken in the pasta water for additional protein and toss together!
***This recipe is for a much older toddler as it contains salt, if you want to keep it unsalted and only salt at the table, substitute salted butter for unsalted, only use herbs and black pepper for the seasoning and don't top up w feta.

These are the tastiest pressure cooked baby back ribs that Roland has ever made. If you love ribs, try this recipe instead of your typical barbecued (bbq) ribs. The flavour profile of these ribs will blow your mind. We have cooked these ribs both in an oven as well as a pressure cooker and we found that with pressure cooking, you can achieve the super tender fall-off-the-bone effect. Highly recommended! Fret not if you don't have a pressure cooker. You can still cook these yummilicious ribs in your oven or airfryer. You can use your stove-top pressure cooker to make these ribs too.

Ingredients:
Makes about 8-10 ribs (serves 3 - 4 pax)
Part (1)
2 stalks of lemongrass (only white part)
30g of young ginger
5 cloves of garlic
5 pcs of shallots
A small handful of kaffir lime leaves (remove spine)
90g of palm sugar (can use brown or white sugar)
1/2 tbsp of chilli powder (optional)
1 tbsp of turmeric powder
1 tsp of coriander seed powder
1/2 tsp of nutmeg powder
1 tbsp of salt
125ml of kichap manis (Indonesian sweet soy sauce)
65ml of water
Part (2)
550g of ribs
Part (3)
Some cornstarch solution
Blend Part (1) into a marinade and use it to marinate Part (2) after you have scored it all over. Marinate the ribs for at least 2hrs or best overnight. Pressure cook the ribs for 30 mins or cook them in an oven or airfryer. If you’re cooking the ribs in an oven or airfryer, remove as much marinade from the ribs as possible before cooking. See cooking time below.
Once the ribs are done, bring the sauce to a boil and thicken it with Part (3). Thicken the sauce enough to coat the ribs well. Serve while the ribs are hot.
Cooking temperature in oven.
(A) Preheat oven at 180C for at least 20 mins
(B) 180C (356F) for 1hr
(C) 220C (428F) for 10 mins
If you’re using an airfryer, preheating is not necessary. Cook your ribs starting from Step (B).

Ingredients:
Chicken Wings 10 pc
Ginger 2 slices
Fine Shrimp Sauce 1 1/2 tbsp
Soy Sauce 1 1/2 tsp
Rice Wine 1 tsp
Sugar 2 tsp
Chili Powder 1/4 tsp
Water 1 tbsp
Apricot Jam 1 tbsp
Directions:
1. Put chicken wings and ginger into a pot, cover with room temperature water.
2. Cook over med-low heat until water almost comes to a boil.
3. Drain chicken wings then cover with cold water and let cool.
4. Pat chicken wings dry with paper towel.
5. Add fine shrimp sauce, soy sauce, rice wine, sugar and chili powder to
chicken wings and mix well.
6. Cover with cling film, marinate chicken wings in refrigerator for at
least 2 hours.
7. In a frying pan, heat oil on med-high heat.
8. Add chicken wings, pan-fry until golden, 1 - 2 mins each side.
9. Add water to remaining marinade and mix well.
10. Add half of the marinade-water to the pan, cover and cook over low
heat for 2 mins.
11. Flip chicken wings over, then add another half of the marinade-water, cover and cook for 2 more mins.
12. Brush both sides of wings with apricot jam, pan-fry slightly.
Remarks:
- If your apricot jam is too thick, put into a microwave oven and heat
for 10 seconds before using.
