The most satisfying bowl of Vietnamese Pho in recent years, from a young couple only offer private dinner service. Dishes are cooked with skills , ideas & heart. Pho on the menu is particularly fond of us , it’s simply outstanding! The broth looks thick but actually the flavour is clean , with intense sweetness from beef bones, and the spices in the broth is a delicate handling of balanced combination. Generous amount of fresh herbs are prepared (as usual) , however , what surprised us a lot is the deep fried shredded banana flowers , it enhanced the flavour to another level after adding to the pho!!! Act like a secret weapon completely !!!
Lastly : raw beef is Korean beef prepared by the host —— rich meat flavour & soft-velvety texture , which made this a perfect bowl of Pho.
近年吃過最滿意的一碗越式牛河,出自一對年輕夫婦主理的越南菜私宴,他們只做上門到會,許多菜式做得巧手有想法,牛河相當出色,湯頭看似濃厚,其實味道非常清甜、裡頭的香料味均衡細緻!配料方面當然少不了常規的大量各式香草,更上一層樓的是還凖備了大量炸過的切絲香蕉花,加入牛河一起吃,香氣四溢,更添美味!最後必須一提:生牛肉片是主人家自備的韓牛,牛味濃郁肉質軟滑,就這樣成就了一碗完美的牛河,吃罷幸福感油然而生。

The River Prawns is what everyone comes for at @baanrabiangnam_rivertreehouse
And they're such pros at it, the prawns come out succulent and a little smokey every single time. So I'm told and now believe. Digging out the bright sunkiss-coloured congealed head juice is all but mandatory, so save that for last. The real deal here though, apart from the picturesque view and signature prawns, there's so much more to this homely riverside experience than one might expect.

Was the obvious choice, nestled by the Chaophraya River, the multi-storey eatery is built almost entirely of wood, including the chair (bring a seat cushion if you wish to settle-in) and terraces, which makes for the perfect spot for boat and fish watching. During this period there were little diners so we were half expecting that the menu would by downsized and less than fresh as usual, turns out we were only half right. Although some of first choices were unavailable, I believe I've never had a fresher soft shell crab in my life. The batter so delicately crisp as to compliment the tenderness of the crab shell and flesh and that raw Mango dipping sauce! Bloody hell, that's a meal in itself. This dish in some ways almost outshone their signature grilled River Prawn.... (next post)

宇和島の宿はホテルイシバシ。
朝食は珍しくビュッフェスタイルではなくてセットメニュー。
和食を選びました。
宇和島じゃこ天とアジの干物がおいしい。
生卵かけごはんが最高でした。
Shikoku solo trip.
I stayed at Hotel Ishibashi in Uwajima.
Breakfast is unusually a set menu rather than a buffet style.
I chose Japanese food.
Uwajima Jakoten and dried horse mackerel are delicious.
Raw egg over rice was the best.

上越市民のソウルフードであり、市民なら知らない人はいないほどの有名店で看板メニューを食べてみた!新潟県上越市『かけそばつかだ』に伺ってきました!直江津にある昭和創業の老舗で製麺所として開業したのがそもそもの始まりだそう。地元の方からの要望で店ができ、これまた要望でできたメニューが今回頂いた「かけ中か」です。そばつゆに中華麺という組み合わせは意外なほどにしっくり馴染んでおり、そこに生卵と玉ねぎのかき揚げの組み合わせはとてもクセになりますよ。それでは早速ご覧ください!

Joetsu citizen's soul food, I tried the signboard menu at a famous store that no one knows! I visited "Kakesoba Tsukada" in Joetsu City, Niigata Prefecture! It seems that it started as a noodle factory in a long-established store founded in Showa in Naoetsu. The store was opened at the request of the locals, and the menu that was also made at the request is "Kakechuka". The combination of soba soup and Chinese noodles is surprisingly familiar, and the combination of raw eggs and fried onions is addictive. Please have a look!

事發經過:
本文為抱怨文,句句實話,且客訴信寫了超過一週未回應,打電話請求回應也沒有,不把
客人當一回事沒關係。不單純抱怨之文末有4人位讓出,因為氣到了!
一直以來RAW不好訂大家都知道,疫情開始後,位置更是難拿,主要原因在於金字塔頂端的
客人出不了國,只好在國內花費,不過當然不只RAW難訂,所有的米其林餐廳都難訂,且自
從宣佈Andre主廚回歸後,RAW的位置更是比疫情之後還要難求,但這陣子連同友人的用餐
體驗(3桌以上,價位為1850、2680、3500),卻是至今最令人失望的一次,主要來自於對
於料理完整性的期望落空,也對於出餐未達到標準卻硬性推出的RAW,感到不值,一切都只
把開季認真回吃的客人當傻子在耍。(6月已將價錢直接調整至4,000)
為什麼說這麼重的話呢?主要來自於對於料理主題的完整性!就以過去的經驗來說,RAW大
多能訂到的都是2680、3500兩種,1850我近2年都沒看過,卻在此次訂到,後面會再說明。
而這兩種價位,對於料理本身的道數上,再過往應該是沒有差別,有的會是食材的變化,
例如多加魚子醬、金箔等高檔食材,但對於喜愛品味創意且小資的客人來說,2680往往足
以欣賞到RAW令人讚賞的料理水準,不少未曾吃過米其林或日式懷石的客人,大多會對RAW
的料理感受到「哇」的一聲!
而在本次開季之中,我至少在3種的價位中,看見了4種不同道數的菜單!這就奇怪了,為
什麼一個剛開季的餐期,會有如此多的不同呢?而這些菜單,在訂位之初可是並沒有辦法
自行選擇,也沒有人會提前告知的喔!那這是否代表不尊重客人的期盼,是否將客人當傻
瓜,不論我端出什麼,你就必須要接受,就算菜色跟後面比有少也一樣?
以下附上本次至今的菜單照片

從以上菜單可看出,你如果選在開季就立即來吃,你會少吃到一道「黑鮪中腹尼斯沙拉」
,以及無法加點「皇家貓眼葡萄蘿莎斯」,而2680的,你不僅上面兩道吃不到,你還更無
法品味道當初在媒體大似宣傳的「經典黑松露鴨肝暖凍」,少了貓眼+暖凍,可說是完全
沒辦法享受到新加坡的菜色!至於1850,就跟2680同樣,但鮑魚等食材會品質差一點,
份量少一點。
根據服務生的說法是,他們人力吃緊,開季之初無法供應,貓眼更需要加價500、且提前預訂?疑?至今我還不知道哪邊有公佈這項需求?不論RAW的
理由是開季太忙,還是沒有足夠人手,這都不是一間準備完善的餐廳該交出的藉口吧?對
於這點非常失望,你沒有準備好,就不要開季!
那除了菜色不完整,缺少主題性之外,本次餐期還有哪些問題?RAW本身環境吵雜,相信去
過的人都知道,因為除了客人在講話外,此次他們還將兩道食物的重組交給一個服務生,
怪了,所以RAW是想告訴大家你們的料理服務生也可以呈現?還是說你們是要推銷介紹鍋子
跟餐具??還告訴我鍋子有多重要,全碳打造非常貴???會提出這疑問是因為,服務生
重組的料理會被端上桌,也就是過度醃製的主菜鴨肝,由於侵泡在醬料過久,太過濕潤,
口感沒有其他在廚房製作的來得好。
此外,當天「芽小麥水針卷」的水針魚製作狀況應該是出來問題,肉質過老,且沒有服務
生口中的生食感,反倒是吃出了水煮牛肉丸的口感,為此我們還直接請服務生來詢問,重
新調整後的,口感層次也有出來,但新任主廚認為他們沒有失誤,只覺得若我們喜歡再生
一點,他就重新調整?但問題是,整桌都認為過老,我們只是不想苛責太多,所以只換了
一份,這時不應該檢討客人吧?
