Feel like having energising soupy dish for iftar today and I’ve been craving for Korean Ginseng Chicken Soup so here’s my recipe lovelies 😍

I use #KoreanRedGinseng extract from #CheongKwanJangmy instead of ginseng roots as it is more convenient.

KOREAN CHICKEN GINSENG SOUP
SERVES 3 TO 4
.
.
Ingredients
.
.
Broth
✅ 1.2 kg whole chicken. Use free range chicken (ayam kampung) if can as.
✅ 1.5 liter water
.
.
Stuffing
✅ 1/4 cup sticky rice, soaked in water overnight or at least 2 hours.
✅ 1 tsp of @CheongKwanJangmy Korean Red Ginseng Extract
✅ 4 whole garlic cloves, peeled
✅ 4 dried Red Dates
✅ 3 to 4 chest nuts
✅ 3 to 4 fresh pine nuts (optional)

Garnish & To serve
✅ 1 to 2 Tbsp thinly sliced green onion
✅ fine pink Himalayan salt, to taste
✅ ground pepper/black pepper, to taste

How to:
.
.
1. Wash the chicken (including the cavity) thoroughly under running cold water.
2. Stuff the chicken cavity with sticky rice, ginseng extract, garlic cloves, red dates, and chest nuts.
3. Cross the chicken legs and tie with a cotton tie. Alternatively, you can make a slit on one side of the chicken thigh skin and put the other leg through it. This is to minimise the stuffed ingredients falling out.
4. Boil water in large pot. Add stuffed chicken & boil the pot over medium high heat, covered, for 20 mins.
5. Reduce the heat to medium to medium low and boil further until the chicken is fully cooked (about 30 - 45 mins).
6. Make sure the stuffed sticky rice is fully cooked too. Skim off any scum as desired.
7. Transfer the chicken and the soup into a serving bowl. You can debone the chicken before serving if you like too. Garnish with green onion and serve with kimchi, salt and pepper/black pepper on the side.

It is also named as Samgyetang 삼계탕 #삼계탕 in Korean Hangul 🇰🇷 ( #蔘鷄湯 in Mandarin 🇨🇳) with recipe of chicken🐔🐓, whole onion, ginseng, jujubes, ginko & water 💦💧to boil in a pot🍲, then simmer for 5️⃣0️⃣mins or more (until the chicken meat falls off the bone🍖)

オートミールでもやしのチヂミ
2人分
材料:
■生地
オートミール 30g
水 50ml
卵 2個
もやし 60g
ニラ(3cm幅)25g
ピザ用チーズ 40g
鶏ガラスープの素 小さじ1
塩 少々
こしょう 少々
ごま油 適量
糸唐辛子 適量
■タレ
しょうゆ 大さじ2
酢 大さじ1
白いりごま 小さじ1
作り方:
1.ボウルにオートミール、水を入れ、600Wの電子レンジで1分加熱する。取り出して粗熱を取る。
2.(1)に卵を加えてかき混ぜ、もやし、ニラ、ピザ用チーズ、鶏ガラスープの素、塩、こしょうを加え、混ぜ合わせる。
3.フライパンにごま油を引いて中火で熱し、(2)を流し入れ、全体に広げる。
4.焼き目が付いたら裏返し、両面焼く。
5.取り出して食べやすい大きさに切る。
6.ボウルにタレの材料を入れて混ぜ合わせる。
7.皿に(5)を盛り付けて糸唐辛子をトッピングし、タレを添えたら完成!

Korean Pancake Made With Oatmeal
Servings: 2
INGREDIENTS
◆Batter
30g oatmeal
50ml water
2 eggs
60g bean sprouts
25g Chinese chives (cut into 3cm pieces)
40g shredded cheese
1 teaspoon chicken soup stock powder
Some salt
Some pepper
Some sesame oil
Some chili threads
◆Sauce
2 tablespoons soy sauce
1 tablespoon vinegar
1 teaspoon toasted white sesame seeds
PREPARATION
1. Microwave oatmeal and water in a bowl for one minute at 600W. Let it cool.
2. Add eggs into the bowl (1) and mix. Add bean sprouts, Chinese chives, shredded cheese, chicken soup stock powder, salt, and pepper, then mix well.
3. Heat sesame oil in a pan over medium heat. Pour the batter (2) into the pan.
4. Cook until the base is set and golden. Flip the pancake to cook the other side.
5. Remove the pancake from the pan. Cut into bite-sized pieces.
6. Mix all ingredients for the sauce in a bowl.
7.Serve (5) on a plate, top with chili threads, and add sauce.
8. Enjoy!

不少人對張慧敏「Son姐」也不陌生,作為獵頭公司創辦人兼CEO,她縱橫職場多年,見盡職場光怪陸離之事,是一位女強人。想不到原來Son姐除了出得廳堂,還入得廚房,廚藝極之了得!作為一個媽媽,Son姐施展渾身解數,務求令兩個仔女都食得開心。我們當然抓緊機會,請Son姐煮幾味,過幾招給各位觀眾。
材料:
牛柳半磅(切片)
韓式豉油1小碗
蜜糖1小碗
黑椒1湯匙
蒜茸1湯匙
麻油1湯匙
薑數片
芝麻適量
韓式粉絲1紮(先浸暖水1-2小時備用)
魚露/鹽1-2湯匙
洋葱1個
京葱1條
甘筍1條
雞髀菇、冬菇、蘑菇、金針菇(可隨個人喜好選擇菇類,素食版本只要不加牛肉即可)
韓式辣椒粉隨意(可以加多減少)
做法:
1.碗中加入切好牛柳,加入豉油、蒜茸、蜜糖、黑椒、麻油拌勻
2.小鍋內加入4杯水,煮滾加入洋葱、甘筍、京葱及醃好的牛柳
3.煮大概5分鐘,然後加入韓式粉絲及菇類,直至所有材料煮腍
4.期間可撇去泡沫
5.加入魚露調味
6.最後撒上芝麻
Korean Beef and Vermicelli Soup
Ingredients:
Beef tenderloin ½ lbs, sliced
Korean soy sauce 1 small bowl
Honey 1 small bowl
Black pepper 1 tbsp
Garlic 1 tbsp, minced
Sesame oil 1 tbsp
Ginger A few slices
Sesame Some
Korean vermicelli 1 bundle (soaked in warm water for 1-2 hours)
Fish sauce or salt 1-2 tbsp
Onion 1 pc
Leek 1 pc
Carrot 1 pcs
King oyster mushrooms According to personal preference
Shiitake mushrooms According to personal preference
Mushrooms According to personal preference
Enoki mushrooms According to personal preference
Korean chili flakes According to personal preference
Note: For a vegetarian version, just remove the beef from the recipe.
Steps:
1. In a bowl, add beef tenderloin slices, soy sauce, minced garlic, honey, black pepper, and sesame oil, mix well.
2. In a small pot, bring 4 cups of water to boil. Add onion, carrot, leek, and marinated beef tenderloin.
3. Cook for around 5 minutes, add Korean glass noodles and assorted mushrooms, cook until all ingredients are tender.
4. Meanwhile, remove any foam floating in soup.
5. Add fish sauce to taste.
6. Sprinkle sesame on top to finish.

レタスとカニカマのナムル
2人分
材料:
レタス 1/2個(200g)
カニカマ(ほぐす) 3本
韓国のり 5枚
ごま油 大さじ1
白いりごま 小さじ1
鶏がらスープの素 小さじ1/2
にんにく(すりおろし) 小さじ1/2
塩少々
作り方:
1.レタスは食べやすい大きさにちぎってボウルに入れ、塩少々をまぶして軽く揉み込み、10分置く。水気が出たら手で絞り、ボウルに戻し入れる。
2.別のボウルに鶏がらスープの素、にんにく、ごま油、いりごまを混ぜ合わせ、(1)に加えて和える。
3.カニカマ、韓国のりをちぎり入れ、サッと和えたら、完成!
肉巻きレタスのオイスターソース炒め
2人分
材料:
豚ロース薄切り肉 6枚
レタス 1/4個(85g)
塩 少々
コショウ 少々
薄力粉 適量
サラダ油 大さじ1
オイスターソース 大さじ2
酒 大さじ1
しょうゆ 小さじ1
作り方:
1.レタスはひと口大にちぎる。
2.豚肉を広げて(1)をのせ、手前からきつめに巻き、塩、コショウ、薄力粉を全体にまぶす。
3.フライパンにサラダ油を引いて中火に熱し、(2)を巻き終わりを下にして並べ入れる。時々転がしながら全体に焼き色を付ける。
4.酒、オイスターソース、しょうゆを加え、全体に煮絡めたら、完成!
サバ缶とレタスの和風パスタ
2人分
材料:
スパゲッティ 160g
さばみそ煮缶 1缶
レタス 2~3枚
にんにく(みじん切り) 1片
輪切り唐辛子 1/2本分
オリーブオイル 大さじ2
しょうゆ 小さじ1
塩 少々
粗挽きコショウ 少々
作り方:
1.鍋に湯を沸かし、スパゲッティを袋の表記時間通り茹でる。
2.フライパンにオリーブオイル、にんにく、輪切り唐辛子を入れて弱火にかける。香りが立ってきたら、さばみそ煮缶を汁ごと加え、さばをくずしながら炒める。
3.レタスをちぎり入れてサッと炒め、湯切りした(1)を加えて混ぜ合わせる。
4.しょうゆ、塩、粗挽きコショウで味を調えたら、完成!
レタスと卵のマグカップスープ
1人分
材料:
レタス 1枚
溶き卵 1個分
水 200ml
鶏がらスープの素 小さじ1
ごま油 小さじ1/2
万能ねぎ 適量
作り方:
1.マグカップに水、鶏がらスープの素、レタスをちぎり入れる。ふんわりラップをかけ、500Wの電子レンジで3分加熱する。
2.取り出して溶き卵を回し入れ、ふんわりラップをかけ、再び500Wの電子レンジで1-2分加熱する。
3.仕上げにごま油を回しかけ、万能ねぎをのせたら、完成!

1. Tear lettuce into bite-seize pieces and mix with salt. Leave for 10 minutes. Drain water.
2. In a separate bowl, mix chicken soup stock powder, garlic, sesame oil, and roasted sesame. Add into (1) and combine.
3. Add imitation cram meat and Korean dried seaweed and mix.
5.Enjoy!
Rolled lettuce and pork with oyster sauce
Servings: 2
INGREDIENTS
6 pork slices (paper thin)
1/4 lettuce (85g)
A pinch salt and pepper
Some all purpose flour
1 tablespoon vegetable oil
2 tablespoons oyster sauce
1 tablespoon sake
1 teaspoon soy sauce
PREPARATION
1. Tear lettuce into bite-size pieces.
2. Put lettuce (1) on pork slices and roll them tight. Season with salt and pepper, coat with all porpose flour.
3. Heat a lightly oiled pan over medium heat and place the rolled pork. Move as needed until golden.
4. Simmer sake, oyster sauce, and soy sauce. Pour over the rolled pork.
5.Enjoy!
Japanese pasta dish with lettuce and canned mackerel
Servings: 2
INGREDIENTS
160g spaghetti
1 mackerel can
A few leaves of lettuce
1 clove garlic (chopped)
A pinch salt and pepper
1/2 sliced chili pepper
2 tablespoons olive oil
1 teaspoon soy sauce
A pinch salt and pepper
PREPARATION
1. Cook spaghetti as instruction.
2. Heat olive oil, garlic, and chili pepper in a pan over low heat. Add canned mackerel (soup as well) and stir fry, break the fish meat.
3. Tear lettuce and put into the pan, add cooked spaghetti.
4. Season with soy sauce, salt, and pepper.
5.Enjoy!
Microwave lettuce and egg soup in a mug
Servings: 1
INGREDIENTS
1 leaf of lettuce
1 beaten egg
200ml water
1 teaspoon chicken soup stock powder
1/2 teaspoon sesame oil
Some scallion
PREPARATION
1. Tear lettuce. Put water, chicken coup stock powder, and lettuce in a mug. Plastic-wrap loosely, microwave at 500W for 3 minutes.
2. Remove the mug, add beaten egg. Wrap and microwave again at 500W for 1 to 2 minutes.
3. Dress some sesame oil and sprinkle with scallion.
4.Enjoy!
