炒粿条or Char Kuew Tiao is such a comfort food for many Malaysians alike .. it’s so simple and fast yet you need to get the right heat, technique to master that beautiful Smokey rich taste… I miss the broader kuew tiao noodles that mom use to get at the Ah Sou stall in the local market… one of the best Kuew Tiao that I’ve tasted within these few years is not from Penang, not from Malaysia or Singapore. It’s from a little up market hawker center looking place near Victoria Market in Melbourne and the taste of the Wok Hei came from an Ang Moh Chef !! I wonder if it’s still there ?
Anyways this is my version using a ready to cook sauce from @sempoa21 ..
And don’t crucify me for not putting in cockles .. it’s lock down so we cockless … enjoy ..

#自己的餐盤自己收 🇸🇬
「法律規定:在夜市吃飽後,必須自己收拾餐桌,不然呢?」新加坡國家環境局14日公布了一項民生政策,確認全國將從6月1日正式實施「外食用餐自己收」的新法規矩,相關政策主要針對新加坡小吃集中的「小販中心」(hawker center),未來所有外食客在用餐後,將有「法律責任」自行整理回收餐具、並維持餐桌整潔乾淨,否則初犯罰則最高將面臨2,000新幣——即約新台幣4萬2,000元——的昂貴罰款。

這項強制整理桌面的罰則規定,將於6月1日開始展開為期3個月暫無罰則的全民緩衝宣導期,但到了9月以後新制就要正式上路。未來相關取締工作,也將由環境局與食品局聯手,最終政策目的就是要進一步強化新加坡饕客的「用餐文明」,升級小販中心的整潔、衛生與用餐品質形象——畢竟在新加坡潮濕炎熱的氣候環境之下,沒人收拾的餐桌很容易吸引蚊蟲、甚至發臭。

新加坡的「餐桌整潔運動」已經推廣年餘,特別是在2020年新加坡成功將「小販文化」申請列入聯合國教科文組織的「人類非物質文化遺產代表作名錄」後,星國政府也更進一步加強推廣小販中心的整潔運動,企圖進一步升級小吃飲食的衛生觀感與進步形象。

規定中,到小販中心用餐的客人,未來將有義務維持個人用餐區的整潔,包括主動回收餐盤、餐碗,衛生紙、碗筷、廚餘、湯汁...等垃圾,也都不能隨意留在餐桌上,必須隨手整理、保持餐後清潔。

主導政策的環境局表示:新加坡政府為了推廣「自己餐桌自己清運動」,已連續多年投入重金、試圖教育國民提升公德意識。但此一政策的推廣成效相當有限,以過去3個月的密集宣傳為例,只有35%的食客願意隨手回收餐盤,廣告對公德心程度的提升只有2%。

「推廣是有在推廣啦,但10個客人裡,真的會配合收餐盤的,只有2、3個人而已...這還是有良心的狀況,在平常上班日的午餐時間,狀況才真的慘。」一名小販中心的管理主任,無奈地向《亞洲新聞台》表示。

「政策上當然是要柔性勸說顧客收桌子啊,但很多客人也會很不客氣地反嗆『你們沒錢聘清潔工嗎?不然你是來吃閒飯的喔?』...但實情上不是這樣,清潔人員還要進一步仔細清潔大家的餐桌、餐具啊,特別是在防疫期間,各種消毒政策還更為嚴格,這對於業者來說都是更為龐大的壓力。」

當局強調,隨手清餐盤的政策,不僅是為了維持環境衛生,在COVID-19的衝擊之下,未來很長一段時間,人潮群聚的小販中心都必須維持最高標準的防疫清潔。但清潔人員們,大多都以上了年紀的大齡勞工為主,要如何最有效率地使用人力?並盡可能降低這些第一線清潔服務者的染疫風險,隨手清理自己的餐盤、餐桌,已經是隨手作公德的最低標準,未來若是設備與政策更為完善,甚至可能要求食客洗完碗盤(部分中心已設有中央洗碗機)才準離去。

不過相關的政策上路,可能還需要一段時間大家才能真正實踐。因為新加坡已於5月14日重新恢復公共封鎖的「防疫限聚令」。這是因為過去幾周來,新加坡重新出現了11處社區感染,除了來自印度變種病毒株的全新威脅外,新加坡樟宜機場也傳出46例群聚感染。因此除了所有人重新回復異地上班外,公眾場所也再度頒布了兩人以上限聚令,包含小販中心在內的餐飲空間也都一律不准內用飲食。

相關防疫封鎖令,將至少維持到6月13日。能否挺過這一個月、重新迎回能夠自由呼吸的夏天,相信在疫情動盪的當下,也不僅只是新加坡人如此期盼著。

沒想到我個性的黑暗面,竟然在新加坡被釋放出來了。哈哈哈(尷尬)在台灣和墨爾本的時候,大家每次見到我都說:「Mickey到底妳是如何做到每天都如此快樂的?」坦白講我的回答就是:「可能常常覺得自己很幸運又很幸福吧,是那種每一天都覺得自己像撿到100塊的幸福+慶幸感。」
但是目前在新加坡,我怎麼這麼常在那邊該該叫啊?從來不覺得自己是負面的人,也更不想成為那些無病呻吟的人,但,我也不想隱藏自己的情緒啊!
仔細想想,或許真的是社群軟體的關係耶?當年一個人去墨爾本的時候,我根本沒在玩IG,FB,有點算半故意的希望自己可以跟台灣的一切割離,所以才能下定決心的學習英文和新事物。像是斷臂求生一樣,拋開了一切可以讓我回到當初的機會,確定自己就是必須這麼做了,沒有退路。所以才有辦法真正的融入當地、感受現實,也才能真正了解當地人盛會的幸福吧。
而現在,我覺得我的問題就是,一直沒有好好的融入新加坡,來了7個月Hawker center只去過2次,過的日子都還是台灣人或是澳洲人的方式。每一天遇到不如意的事情,就切換成台灣人或是澳洲人的想法:「啊~要是我在墨爾本~哎呀如果我還在台灣~就不會這樣子了~。」
再加上!看著社群軟體中的大家,台灣的朋友、墨爾本的朋友的生活,那些我熟悉的生活...再看看自己的狀況...我怎麼可能開心的起來啊!就算知道社群軟體好多都是被放大假像的快樂,我還是不自覺得被擺了一道了。
會把這些情緒抒發出來是因為我想讓大家認識真實的我,(好我承認我確實拍了很多不太真實的網美照😂)不希望營造自己是一個擁有無止盡正能量的孩子,因為那不是我。
換句話說,當了大家的太陽這麼多年,你們應該不介意我偶爾的雨天吧~~~
///從今天開始我要再回到當年那個壯士斷腕的精神,不讓自己有退路。一切的挑戰都是好的,不會的東西就是要學,比別人花多一倍的時間沒有關係,只要確定這是自己想走的路,對未來一切有幫助的事情都是好的。我已經很幸福了,至少我找到了自己喜歡的事情,接下來就是要吸取那些可以讓喜歡的事情茁壯的養分。

In this episode, we went down to Sinar Pagi Nasi Padang at Geylang Serai to destroy a 4KG Nasi Padang Challenge! Sinar Pagi Nasi Padang is a famous Nasi Padang stall that offers up a host of delicious Malay cuisine including their signature BBQ Chicken and Beef Rendang.
Nasi Padang is similar to the Chinese-style economic rice stalls common across Singapore, where you get a plate of rice and add on as much sides, ala carte, as you like. Naturally, for Nasi Padang, the sides are heavily Malay-influenced with many types of curries and spiced meat and vegetables. Most of the food would be towards the spicy side.
Unfortunately, we arrived rather close to closing time and they only had a limited number of options left. We ordered them all for this challenge. The staff very competently plated the massive amount of food beautifully onto the plate. To finish, she topped the 6 portions of rice with different types of chilli pastes and coconut atop a banana leaf, resulting in a 4KG plate of Nasi Padang.
The standout dishes would be the beef tripe curry and beef rendang. The beef tripe was extremely tender and the sauce itself was on the salty side, going fantastically with rice. The beef rendang was similarly tender, easily pulled apart with a fork. It had the classic deep spice flavour that you expect from rendangs while not being overwhelming.
This was a reasonably straightforward challenge (other than the accident at the end) that showcased my newfound spice tolerance and also helped to push it further. As mentioned earlier, we came too late and missed many of the “better” dishes Sinar Pagi offers, but it was still an enjoyable meal.

In this episode, we headed down to North Bridge Road Lor Mee to gulp down a GIGANTIC 6KG bowl of Lor Mee. North Bridge Road Lor Mee is headed by Lance, a young hawker, who learned the recipe from a close family friend who similarly ran a famous Lor Mee outlet in his youth. Now, Lance serves a thoroughly refined bowl of Lor Mee with a wide variety of toppings and condiments at $4/5 a bowl.
Lor Mee is Chinese dish brought over to Singapore by immigrants from China. It involves noodles drenched in a thick and starchy gravy topped with sides like hard-boiled eggs and Chinese-style sausage rolls (ngoh hiang), and condiments like vinegar and freshly minced garlic. The heavily spiced gravy is usually thickened with corn starch and eggs.
For this challenge, we piled 8 servings of yellow noodles onto the bowl and filled the bowl with gravy until it was close to full. We then topped it up with massive amounts of fried fish, braised pork belly, Chinese-style sausage rolls and hard-boiled eggs. To round it all off, we added heaping piles of minced garlic, coriander and chilli paste, before squirting a helping of vinegar.
The gravy was exceptional, very well-balanced with noticeable sour-spicy-sweet notes that were not overwhelming in any direction. It was thick as expected, coating each strand of noodles and toppings with savoury goodness. For the toppings, the fried fish really went beyond what we were expecting for a $5 dollar dish. Each piece was fried to crunchy perfection and bursting with moisture and flavour. The contrast between the bite from the fried fish and the sloppy gravy was one to remember. The braised pork belly was also well done, tender and well-marinated with Chinese spices. The best way to eat this dish would be to mix all the added condiments together with the gravy and toppings, allowing the varied and complex flavours to be present with every bite. The addition of chilli, garlic and vinegar elevated an already flavourful dish considerably.
I was not expecting to enjoy this challenge as I have never been a fan of Lor Mee, but I downed this bowl with relative ease and almost wanted seconds. If you are looking for an excellent bowl of Lor Mee or want to try one for the first time, you will not go wrong with North Bridge Road Lor Mee.
