Resipi Doh - Pau Sambal / Burger Malaysia 🇲🇾 / Donut
1/2 paket Ibu Roti ( Yis Serbuk - Mauripan ) , masuk dalam 1 cawan air suam & campur dgn 1 sudu kecil gula - kacau & biarkan dia berbuih- dlm 1/2 jam
Tepung Gandum 400 gram - masuk dalam bekas , buat bulatan tengah2
Dakam bekas tepung tadi ( bulatan ) - masuk air yis tadi, 2 sudu besar brown sugar, garam 1/2 sudu kecik, planta 1 sudu besar , 2 sudu besar susu tepung ( saya pakai susu tepung everyday - kalau tak ada boleh jer skip). Gaul dengan air suam sedikit demi sedikit ( estimated dalam 1/2 cawan air aja ) - pastikan doh tak melekat kat tangan, tgu sampai doh naik ( lebih kurang 45min )
Bila doh dah naik , buangkan anginkan pada doh tadi, bulat2 kan - anggaran 1.6 oz per doh ( timbang jgn malas🤣) , dah bulatkan tgu lagi dlm sejam , dah kembong , panaskan api & goreng , utk donut lubangkan tengah2 ! Siapp

Semalam saya bgtau every bulat2 ni berat dia 1.6g kan, silap tau😂 1.6oz hahahhah, pagi ni bila tgk weigh machine is oz , yg gram tu belah atas, maap kan lah cheq na 😅 patot la ada komen betul ke gram ... ni cheq buat video mcmana nak kasi bulat2 macam cheq ! Aku memang suka makan burger (Semua makanan pun aku suka haha). Aku tak pernah langsung buat burger sendiri. Kalau setakat beli daging burger ramly lepas tu masak kat rumah tu pernah la, tapi yang jenis buat beef patty from scratch memang tak pernah.

Aku banyak kali tengok Gordon Ramsay masak burger, tapi yang resipi yang satu ni yang pada aku sangat simple tapi nampak best.

Kepada sesiapa yang nak cuba buat, ini resepinya :

BEFF PATTY
Bahan-bahan :
- 300 gram minced beef (tak kisah apa jenama pun janji HALAL)
- Salt & pepper
- Minyak masak (Olive oil kalau boleh)
- Butter (Optional)
Langkah 1
- Bentuk beef patty, jangan terlalu nipis dan jangan terlalu tebal.
Langkah 2
- Season kan beef patty tadi dengan salt & pepper secukup rasa. Pastikan salt & pepper diratakan pada semua permukaan beef patty.
Langkah 3
- Rehatkan sebentar, sapu minyak (Olive oil) kemudian grill
Langkah 4
- Sapukan butter pada permukaan patty (selepas 3-4 minit masak)
Langkah 5
- Letakkan 1 slice cheese di atas patty yang masih panas.
Langkah 6
- Angkat dan biar rehat sebentar di atas grill penyejuk.
BURGER
Bahan-bahan :
1. Lettuce
2. Tomato
3. Bun
4. Mayonnaise
5. Caramelized onion
Susun semua bahan mengikut citarasa anda atau boleh refer di dalam video.

INGREDIENTS
A. For the stock/ broth
15 gram/ 1.5 Tbsp dried shrimps or dried anchovies
2 sheets dried kelp (Kombu/ Dasima) - palm sized
10 gram/ 3 cloves garlic
10 gram/ 5 slices ginger
30 gram (about 1/3) onion - cut into chunks
600 ml / 2-1/2 cup hot water
B. For the rice cake
180 gram / 6.5 oz. Korean rice cakes - fresh, dried or frozen
100 gram / 3.5 oz. fish cake - optional
8 quail eggs or 1 egg - hard boiled and shelled
2 spring onions
1 Tbsp Korean red pepper paste Gochujang
1 ~ 1.5 Tbsp soy sauce
1 Tbsp brown sugar
0.5 - 1 Tbsp. Korean chilli flakes - to taste - optional
Mozzarella cheese shredded
Toasted sesame seeds
If using frozen rice cakes, thaw and soak in cold water for at least 2 hours

A. Hong Kong cotton sponge cake
4 egg yolks (18 - 20 gram/ yolk)
20 gram (1-1/2 Tbsp) caster/ superfine sugar
40 ml (3 Tbsp minus 1 tsp) milk
30 ml (2 Tbsp) vegetable oil
1/2 tsp vanilla extract
50 gram (1/2 cup minus 1-1/2 Tbsp) all purpose flour
50 gram (1/3 cup) corn starch
4 egg white (30 - 35 gram/ egg white)
a pinch salt
1/4 tsp cream of tartar
70 gram caster sugar (6Tbsp) - sifted
B. Coffee liquor syrup
40 ml (3 Tbsp minus 1 tsp) strong coffee (freshly brewed preferred_
20 ml (1-1/2 Tbsp) Rum
3 ml (1/2 tsp) vanilla extract
1 tsp caster sugar
C. Tiramisu cream
200 gram (7 oz.) Mascarpone cheese - at room temperature
70 gram (6 Tbsp) caster sugar - sifted
300 ml (1-1/4 C) whipping cream (35 - 40% fat) - cold
15 ml (1 Tbsp) Rum
5 ml (1 tsp) vanilla extract
* NOTE:
- Mascarpone cheese can be substitute with cream cheese, the Tiramisu cream will be a little bit salty but still tastes great.
