There's so much to be said of Cadence Restaurant by Dan Bark , changes so acute should be given the time and attention.
First of all, Cadence is immense. From the origins of their quaint second floor shophouse restaurant they've moved to an almost blank facade building, with multiple faceted rooms; a bar/waiting room, Caper ("casual" dining room), and a design which even accommodates a "desensitising" room which subdues the mood between bar and restaurant. In this darkly lit room they will serve you champagne, surrounded by mirrored walls & candle light reflections before entering the fine dining space.
After idle chit chat and multiple selfies, the curtain is pulled beck to reveal Cadence, the room most vast in size and luxurious with its banquette seating, muted beige and white tiled, open kitchen. We can't help feel we've entered into some black and white vintage movie set, to find a slick haired Carey Grant sitting in the corner smoking a cigar and Audrey Hepburn opposite, swirling a crystal Martini glass. Totally class, absolutely charming and meticulous in detail, if maybe a little too brightly lit and scripted for some.
The opulence of Cadence transcend throughout the meal, with the first bites of Oyster and Caviar. The later, GROUPER and LAND dishes are suitably luxe and fitting with mature fine dining conventions, although the 'American contemporary' title often feels misplaced.
Yet, once the Red Shrimp appeared we rediscovered the taste of the Dan we know. It's combination like watermelon, lemongrass tea & toasted milk which reminds us of an adept skill with respect to fresh ingredients combined with exotic flavours & flair of technique.
The same could be said of the PEA dish of English Peas, Lavender, Creme Fraiche, Prosciutto. Dan manages to bring out vibrancy in dishes that have an uncanny ability to imprint on one's memory palate. I can still taste those peas!
But the 'pièce de résistance' of the entire experience, undoubtedly is the BEEF; Burdock, Kelp, Ssam Jang. It had all the markings of being fine but with the presence of Chef's Korean culture and the quirkiness of a young, cheeky, fun chef. We could truly feel his culinary heart beating in this one.

2018年同志遊行所關注的議題是:「性別友善設施」。
在性別二元觀念根深蒂固的社會環境中,廁所、更衣室、試身室這類設施多以性別區分,任何分類都總有少數人被夾在尷尬的處境當中,我們看見跨性別者及家庭照顧者就是這少數人。 增設「性別友善設施」就是照顧主流大多數的同時,為有同樣需要的少數人提供多一個有尊嚴的選擇。
你一天會上多少次公廁?有否試過,為了怕入廁所而整天不敢喝水?你知不知道,有跨性別者會因為外貌性別氣質與身份證上的性別不一樣,而不敢進入泳池的男或女更衣室和浴室?「性別友善設施」就是在男/女設施以外,加設一個小小的性別中立空間,是一個讓跨性別者可以安心生活的空間。
跨性別議題在香港討論漸多,去年6月政府推出「性別承認」公眾諮詢第一期,內容包括應否在香港設立性別承認制度等。然而這個諮詢是「W案」2013年勝訴後足足四年才推出,且還要等多不知幾年才會推出第二期諮詢後,政府才會考慮是否立法。
「性別承認」法例遙遙無期,日常生活也可以先行一步,改善跨性別者的生活處境。每個機構、公司、院校、小店也可以設立「性別友善廁所」,公營及私營的康樂體育場地可設置「性別友善更衣室」,讓跨性別者不用時刻在非男即女的設施選項之間,遭受不必要的生活壓力。
「性別友善設施」更可以是一個多功能的家庭及照顧者友善空間,所有性別的人,包括順性別男女同樣受惠。見過有自稱是母親的反對者說「絕不能容忍女兒和自認為是女性的男人共用廁所」,但她是否有想過,帶著幼女上街的父親可以去哪個廁所呢?她是否覺得女孩可以跟著父親去「危機處處」、「無遮無掩」的男廁? 推行「性別友善設施」並不代表取代現有的男女設施,我們同樣尊重希望使用性別區間設施的想法,但亦不能抹殺「性別友善設施」有其存在的需要。
現時香港也有性別友善廁所,例如是數間大學、多個商場及街市、醫院、以及眾多空間狹窄/小的小店等等。香港同志遊行2018的籌委會希望呼籲大眾支持設立「性別友善設施」,使之更為普及,藉以教育大眾瞭解小眾的存在和需要,讓香港一步步成為性別友善城市。

2018 Hong Kong Pride Parade Highlight: All-Gender Facilities
In a gender binary environment, facilities such as toilets, changing rooms and even fitting rooms in shops are differentiated by just two genders. Some minorities such as transgender people or family carers may feel embarrassed when using these facilities. Increasing ‘All-Gender Facilities’ in the community not only benefits the majority of people but also pay respect and gives a better choice for those minorities.
How many times do you have to visit the public toilet every day? Have you ever stopped drinking water just because you are afraid of entering public toilets? Did you know that some transgender people are afraid of going to public swimming pools, changing rooms or even toilets because their appearance and their gender on their identity cards do not match each other? ‘All-Gender Facilities’ provides a better and safer environment for transgender people.
There is an increasing number of discussions on transgender topics. In June last year, the Hong Kong government has launched a public consultation on legal gender recognition including whether a gender recognition scheme should be established in Hong Kong. However, this is only the first phase of public consultation and it only took place 4 years after the ‘W Case’ had won in court. It is still unknown when there will be a second phase of consultation and whether the Hong Kong government would consider establishing any laws on this issue.
Although legalizing gender recognition is nowhere in sight, we can still take our very first step in our daily lives to enhance the living environment for our transgender friends. Every organization, company, institute or even small shops could establish an ‘All-Gender Toilet’ while public or private leisure facilities or venues could establish an ‘All-Gender Changing Room’ so that transgender people do not have to choose between male or female facilities and that they could use these ‘All-Gender Facilities’ anytime without feeling embarrassed or stressed.
‘All- Gender Facilities’ also brings a friendly space for families and their carers of different genders. A woman once claimed that she wouldn’t allow her daughter going into the same toilet with a man who identifies himself as a female. Yet, she had never stepped into the shoes of those fathers who had to take care of their daughters and didn’t know which toilet to go to when they are in public. Did this woman think that the daughter should follow her father into a male toilet where it may be dangerous and has little privacy? Establishing the ‘All-Gender Facilities’ does not mean replacing male and female facilities. We do respect the thought of using male and female as a differentiation to all kinds of facilities but at the same time, we cannot obliterate the importance of ‘All- Gender Facilities’.
Nowadays, we can find gender friendly toilets in some universities, shopping malls, markets, hospitals and small shops. The Hong Kong Pride Parade Committee 2018 encourages everyone to support and promote the establishment of ‘All- Gender Facilities’ so as to public educate the majority to understand the existence and needs of the minorities thus making Hong Kong a gender friendly city.

This is not the end of Vietnam videos! Good news! When I left Vietnam in early March (when this video was filmed) I never thought I would be returning so soon. That's right, I'm coming back during the summer for 1 month only to film more content. I am only visiting and have no plans to move back. I was given an opportunity a few weeks ago through a flight sponsorship to film a documentary about a boat refugee story that is quite compelling. There's someone out there who really enjoyed my boat refugee videos and want their story told. It's as simple as that. If I could get these stories on a mainstream site, like the Huff Post, I feel like I've done what little I could to preserve Vietnamese history through oral history. If we don't record history, it'll be lost forever. I was unsure but with the approval of my parents, I'm going to accept this blessing and opportunity. Hard work pays off in ways you could never imagine it. Plus, I felt incomplete towards the end of my stay in Vietnam because I couldn't film as many documentaries as possible, including one about my grandmother. In order for me to truly begin something new, I have to finish what I started. I feel very "unfinished" right now. I just ran out of time from having to edit so much. In the past two months I've met so many of you and to hear your support and love for Vietnam videos, made me feel like it was my duty to delay reality a little longer so I could present more content. In other words, a month of my time can equate to two or three months worth of videos that many people can enjoy. I don't miss Vietnam and I'm happier since leaving, but I'm excited to get back to see Vietnam from a slightly different perspective as a tourist and not as someone living there. During the summer, a lot of familiar faces and featured guests will also be there, so it would be very fitting to be there as well. I can't wait to see my friends and family again. There are other opportunities that also came up that allowed me to make this decision, but you will see them at a later time. This is kind of a redemption trip for me where I can tie up all the loose strings and feelings of incompleteness that I've felt since leaving. Again, I want to emphasize that I'm happy and fine since leaving. There's no yearning to move away from America right now, but I do have a passion to create a few more Vietnam videos. I don't really care much about the famous places as I have been to most of them, but this time it's more about telling stories. I will have some travel vlogs as usual, but I want to focus more on short documentaries. Again, thank you for everyone who wrote me messages the past few days. Nothing much has changed in life, I'm currently in SoCal just editing videos like crazy every day. You will love the Vietnamese diaspora content coming up and the limited run Vietnam content coming in the near future. So my question to you is, and probably for the last time is, what would you like to see in Vietnam?
My biggest regret when it comes to living in Vietnam for over 5 years is the fact that I worked too hard, especially on weekends, and didn't have a chance to spend more time with my family. I was too tired from work to make the drive and I didn't want to displace anyone from their rooms. I didn't want to bother them or I was annoyed of their antics and opinions. It was also very hot most of the time as few of my relatives actually have AC in common areas. Towards the end of my sojourn, I visited them more often and thus we got closer towards the end. I will return soon to spend more time with them and to film more content from Vietnam for you guys!
