Avocado Toast 2.0🥑($128HKD) 大概是懶人的最大敵人!本來以為它會像一般avocado toast, 在廚房預先砌好然後送上。但原來是要自己砌的!😱 雖然起初覺得愕然,不過這個食法其實更好!盤上的牛油果、西班牙辣香腸、芒果、芝士和日本蛋黃可以任由我隨意配搭或調節比例😌❤️ 配一杯Caffe Latte☕️($45HKD),就是一個稱心滿意的下午。

A whole avocado, chorizo sausage, mango, burrata cheese & a Japanese egg yolk is plated neatly on a wooden tray, and you have the liberty to choose what goes on your toast!🍞 I actually quite like this flexibility😌 Pair it with a nice cup of Caffe Latte☕️($45HKD), and voila! A picture-perfect afternoon overlooking Central’s bustling Soho scene.

Time to kick off your Sunday morning right by whipping up the ultimate fry up 🌟
Not a proper guide to a full English fry up but I guess with Solisege’s Solisege's goods, I was able to recreate this delicious fried breakfast at home. Call it what you want, we are calling it fatfoodbeast’s ultimate fry up.
What you’ll need:
[Sausage & Bacon]
@solisegemy’s Hungarian Sausages, Mini Cheese Sausages & Apple Cinnamon Sausages.
Solisege’s Streaky Bacon, Back bacon.
Additional: @solisegemy’s Honey Baked Ham
[Baked Beans]
Don’t be ashamed to reach for a can of beans, the inclusion of beans in your fry-up would definitely give this whole plate a lil punch.
[Tomatoes]
Much like the baked beans, the tomato acts as an optional garnish. The acidity and sweetness from the tomato helps especially when you are devouring all the fatty stuff.
[Forget the toast, get the fried sourdough bread ]
Fried sourdough is just what it is - sliced sourdough bread toasted on the pan with some butter. Perfecto! Got @arethaseraph’s sundried tomato w Italian Herb Sourdough! The addition of sundried-tomatoes & herbs have definitely given the bread a more substantial flavour. Love it!
[The Eggs]
2- 3 eggs cooked to your preference. The runny yolk is visually and aesthetically pleasing but the ability to crack eggs does not necessarily translate to the creation of a perfect sunny side up haha? Hence, got mine scrambled instead. Imma a die-hard scrambled egg fan, so why not? The eggs act as the perfect sauce that brings the whole plate together!
[Optional, but not necessary]
Mushrooms// White Button Mushrooms & Portobello Mushrooms
Having mushrooms in your fry up is a nice addition because it offers a moment of pause from that whole sausage and bacon meat feasting. A good to have for sure.
Black Pudding//
No idea where & how to get/make this. It’s basically a sausage made with pork fat, blood and oatmeal, you may or may not like it.
It is no surprise that the art of a proper fry-up is still alive today and can be found in kitchens all over all the world :) At the end of the day, it is entirely up to you for whatever you choose to include in your fry up.
Time to dust off your old-frying pan, get going :)

Good morning~! Will be sorely missing this Truffles Croque Madame, with Aged Comte & Seasonal Black Truffle, Egg Yolk & Sauce Périgueux. Along with many other items.. To recap My 1st Experience of 『Belon HK』, it started off as something like this sequence:

•I Went to Bones in Paris, run by Chef James Henry. Back in the early to mid 2010's, Paris started seeing quite a few cosier, more natural Wine & Dine concepts popping up, related to the Neo-Parisian movement which often involved French and also Spanish, British or Australian chefs alike. Spawned by the casual fine dining preferences provided by Le Chateaubriand, Au Passage, Septime & Bones, etc
•Naturally after Bones Paris, I was interested to follow up on James Henry suddenly arriving to HK with Daniel Calvert to help open Belon, although there was an interview which already provided early clues that James won't be at Belon for long as he was also committed to a project just outside of Paris.
•At the beginning the Roast Chicken was already at Belon in 2016, almost same Stuffing & recipe, albeit it was only $538 & the Chicken taste gradually improved! It also carried its take on a Sea Urchin on Sweet Potato Waffle & Smoked Bacon Creme fraiche 🤔, the period when everyone tried to do a Sea Urchin with melted Lardo on Bruschetta NYC Marea style even in HK, or Sea Urchin on Brioche like the liquid toast at Saison. Back then the Hokkaido Scallop with Seaweed butter didn't come as a Ravioli yet, the Mille-Feuille tasted like it came from La Vache or Bueno Aires Polo Club. And I never paid for the most expensive stuffed Chicken Wing Farci as it costed tripled 富哥's at 名人坊 Celebrity Cuisine & which came with Bird's nest 😁.
•Fast Forward to the subsequent years that Daniel Calvert gradually turned Belon into more Fine Dining Bistro experience. More sophisticated Dishes were created, some recipes majorly tweaked. And there were a few more Japanese ingredients incorporated and made into French-esque dishes, perhaps a precursor indication of Daniel's eventual adventure to Tokyo in the future. And in the meanwhile, earning his well deserved Michelin 🌟 & garnering his own loyal Fan base from not just HK but Asia

【エッグベネディクト風トースト】
今日は、食パンで簡単に『エッグベネディクト風トースト』を作ってみました!
お手軽材料で超簡単にできるオランデーズソースが絶品!!本来ならポーチドエッグを作るところを食パンに卵をのせて半熟の焼き加減で取り出して、それっぽく仕上げました!
簡単だけどボリュームもあってとても美味しいので、ブランチなんかにもオススメです。
ソースは作りやすい卵黄1個の分量で作ってるので、二人分できます!タイミングがありましたらぜひお試しください。
〈材料〉ソースは2人分
食パン 1枚
ハーフベーコン 2枚
卵 1個
【ソース】
卵黄 1個
バター 10g
マヨネーズ 大さじ1
塩 ブラックペッパー 適量

【Eggs Benedict-style toast】
Today, I tried to make "Eggs Benedict-style toast" easily with bread!

Salted Egg Thai Custard with Coconut Sticky Rice
ข้าวเหนียวสังขยาในรสชาติและรูปแบบร่วมสมัย กับการผสมเนื้อไข่แดงของไข่เค็มเข้าไปในสังขยา
สังขยาไข่เค็ม
• ไข่เป็ด 3 ฟอง
• กะทิ 250 กรัม
• น้ำตาลทราย 100 กรัม
• เกลือ ปรุงรส
• ไข่แดงเค็มสุก 10 ฟอง
• ไข่แดงเค็มดิบ ตกแต่ง
ข้าวเหนียวมูน
• ข้าวเหนียว 350 กรัม
• กะทิ 200 กรัม
• น้ำตาลทราย 40 กรัม
• เกลือ ปรุงรส
1. ทำสังขยาไข่เค็มด้วยการนำผสมทุกอย่างไปปั่นให้เข้ากัน กรองให้ละเอียดดี นึ่งด้วยไฟอ่อนเป็นเวลา 20 นาที พักให้เย็นลง
2. เตรียมข้าวเหนียวมูน โดยล้างข้าวเหนียวและแช่น้ำเป็นเวลา 1 ชั่วโมง
3. สะเด็ดน้ำข้าวเหนียว นำไปนึ่งให้สุกประมาณ 15 นาที
4. เคี่ยวกะทิในหม้อด้วยไฟอ่อน ปรุงด้วยน้ำตาลทราย เเละเกลือ พักให้พออุ่น
5. เทน้ำกะทิลงในข้าวเหนียว เคล้าให้เข้ากัน ปิดฝาพักไว้ 5-10 นาที คนให้เข้ากันเพื่อกลับหน้าข้าว พักต่ออีก 10 นาที
6. ตักข้าวเหนียวใส่จานเสิร์ฟ หรือกระทงใบตอง ตักสังขยาไข่เค็มราดหน้า และขูดไข่แดงเค็มโรยหน้า

• Duck Egg 3
• Coconut Milk 250 g
• Sugar 100 g
• Salt
• Cooked Salted Egg Yolk 10
• Salted Egg Yolk garnish
Coconut Sticky Rice
• Glutinous Rice 350 g
• Coconut Milk 200 g
• Sugar 40 g
• Salt
1. For Thai custard: add everything into the blender and blend till smooth. Strain the custard into the mould and steam for 20 minutes with low heat. Set aside.
2. For sticky rice: Rinse the glutinous rice and soak for at least an hour. Drain the water and steam the rice for 15 minutes or until cook through and transfer to a big bowl
3. Heat the coconut milk over low heat and season with sugar and salt. While the mixture is warm, pour it over the sticky rice. Gently stir and let rice stand, covered for 5 minutes before stir again and cover for further 10 minutes or until coconut-milk mixture is absorbed.
4. To serve, mould sticky rice on a dessert plate or banana leaves, scoop some Thai custard on top and garnish with grated salted egg yolk.
