[ 美食趣味藝術：oops 我把檸檬塔摔到地上了!! ]
義大利有個很有名的米其林廚師 Massimo Bottura，專門用食材耍花樣做些前衛概念的料理。他煮的不像是我們一般認知的 “食物”，而是煮一種 “想法”。例如 Massimo 曾認為義大利人在吃義大利餃時十分快速，把這日常食物視為極其理所當然，在嘴裡胡咬亂嚼一陣便吞下肚。為了讓人聚精會神的 “品嘗” 餃子，他設計了一道菜，便是六個餃子一個一個排向湯的方向，像是要跳水而入。當時去他餐廳的客人，點完菜一上桌看到是六個小小的義大利餃，無不傻眼，（敢在對料理方面偏保守的義大利做這種事真的勇氣可嘉）Massimo 的餐廳也承受了很長時間的質疑批評，直到某天一個美食評論家碰巧來到他的餐廳，之後將他的食物譽為 “料理的後現代主義” 之後，才從此一砲而紅。
我覺得最有趣的一道菜是圖裡的 Opps, I dropped the lemon tart. 從他的訪問裡，這道菜概念是想挑戰人在日常生活中對完美無異類的追求，並將重點從檸檬塔的形狀等麻煩事拉回檸檬塔純粹的味道上，因此才刻意打碎這檸檬塔來端上桌。
雖說如此，不過 Massimo 在紀錄片裡卻說會有這道菜一開始其實是因為他們餐廳一個人在端菜出去時，不小心把盤子摔到地上，他們急中生智，便把其他盤塔也都給打破，並且搞的像是本來就要故意打破的樣子，這才瞞過客人。
總之，能像這個廚師一樣用食材做藝術，玩遊戲，實驗概念，讓食物不再只是我們吃下肚去的東西，實在是讓 “吃” 再更進一步，也變得更加有趣。
只是我真的不想只吃六個餃子....

There's a fairly famous Italian Michelin cook Massimo Bottura, who constantly plays with edible ingredients to compose avant-guard dishes. What he cooks is not "food" that we ordinarily known, but the "ideas" behind the food. For example, Massimo thought Italians take Italian dumplings too much for granted, always gobbling them down without savoring and appreciating them. So, Massimo designed a dish which is made of only 6 dumplings (yes six) lining towards the soup, as if those little meat filled balls are jumping into water. Not surprisingly, when the clients of restaurant saw this dish presented on table, they all feel like wtf. Massimo's restaurant was under lots of doubts and criticism for a long time, until one day a prestigious food critique went to Massimo's restaurant randomly and after complimented the food there as "The Postmodern of Culinary", from then on, Massimo's concepts started to receive positive feedbacks.
One of the most interesting dishes for me is the one in the picture below: Oops I dropped the lemon tart. In Massimo's interview, he said this dish was designed to poke at people's unconscious compulsive search for perfection and conformity, and to bring the attention from trivial aspects such as the shape of the food back to the essence of food: the taste.
Although in the interview Massimo said so, but if you have watched his documentary, he actually revealed that in the beginning the restaurant launched this dish was because one of the staff accidentally dropped the plates with lemon tart on the ground. To solve this urgent disaster, Massimo decided to break all the other tarts, as if they "planned" to do so. In the end, this witty solution successfully lied over the customers.
Anyway, a cook like Massimo who plays and experiments with food to make art and games indeed makes food not just something we gulp down our bellies, but something more interesting and meaningful.
But still, six single dumplings don't sound so alluring to me..
