Instead of rendering duck fat, which might be more difficult to get in town, we used Borges’ Extra Virgin Olive Oil as an alternative to confit the duck meat; It’s also little lighter on the taste buds too! We paired this dish with broccolini, sautéed in garlic for a clean finish to this wholesome dish. A perfect main for a date for two any day of the week.

A true dish combined from the land, air and sea – this dish has a combination of scallops, smoked duck, over a nice serving of asparagus. Not only is it visually appealing, it tastes fantastic.
This recipe is a flavour bomb, thanks to the combination of the ingredients with Lee Kum Kee’s various sauces, primarily the Seafood XO sauce. The wonderful balance of juices from the duck fat pairs with the sweetness of the scallops makes for a whole new level of taste that’s simple to cook for a dinner date for 2 within 20 minutes!

** Take note, adjust the amount of dark and light soy sauce seasoning based off amount of water used (depending on pot size), if you don't have such a big pot you, can use a small pot, turning the duck every 20 mins while braising.
Thank God it's Friday, and do we have a TREAT to try over the weekend! The Chinese, especially Teochews and Hokkiens love to braise their food. A good braised duck is cooked with love in a pot of soy sauce based braising liquid with essential aromatics. We added chuan xiong (ligusticum) and dried mandarin peels on top of the usual cinnamon sticks, star anise and cloves.
Using quality soy sauces also makes a big difference to the taste. Our favorite topping to go with braised duck are braised eggs and tau kwa. If time permits letting the braised duck rest for longer time before eating it lets the braised taste penetrate your dish better. Perfect for a scrumptious lunch treat this weekend!

Recipe
Le Jean’s Festive Peking Duck
Ingredients
1 Le Jean’s whole Peking duck, 2.2kg
2 tablespoons butter
1 tablespoon five spice powder
2 oranges, sliced into 1 cm rings
1 pineapple, cut into 2cm rings
1 teaspoon sea salt
For the glaze
100g orange marmalade
1 tablespoon honey
1 tablespoon light soy sauce
100ml pineapple juice
1 tablespoon minced ginger
1. Preheat the oven to 160C/150C Fan/Gas 3.
2. Melt the butter and add the five spice powder. Give a good mix.
3. For the glaze mixture, add all ingredients in a bowl and give a good mix.
4. Score the breasts of the duck and transfer into the oven dish. Rub the butter and five spice mixture on the duck on both sides. Season with salt and stuff the cavity with half quantity of orange slices and pineapple rings.
5. Tie the duck legs. Roast in the oven for one hour then take it out and rub with the glaze mixture. Add the remaining orange slices and pineapple rings and put back in the oven and roast for 30 minutes. Then take it out again and brush the final glaze mixture and put back in the oven to roast for the final 30 minutes.
6. Take it out from the oven and let it rest for 10 minutes before serving.
