Very yummy recipe using my favorite root vegetable, the beetroot. Recipe from the Delicious Vegetarian Cookbook of the Year in the Netherlands 🇳🇱 (Lekker Vega Koekboek van het Jaar) called De Gezonde Bourgondiër by @jacintabokma.
