昨天跟朋友來試試看這家舊金山新開幕不久的餐廳 Ernest
這家新穎美式海鮮餐廳位於 Mission 一區
餐廳前身是咖啡廳 Coffee Bar
挑高的室內空間分成了調酒吧檯區與廚房區
還有小小的戶外座位。
由米其林一星餐廳 Rich Table 的大廚 Brandon Rice 自開門戶創辦。
Ernest 受到疫情影響
原本預計在 2020 年夏天開幕
延期到了今年三月份才盛大開幕。
Ernest 餐廳可以透過 Resy 訂位
不過超級受歡迎一定要在開放訂位之後馬上訂
才可以選到晚餐時段的座位
不然也可以在餐廳五點一開門的時候就抵達排隊。
Ernest 的菜單上主要分成了生食、小點、蔬菜、以及主餐
除了單點也可以選擇讓主廚為你料理的套餐
價格為 $95 每人。
Miami Vice Royale $14
調酒我點了以朗姆酒為基底
加入草莓、椰子、鳳梨氣泡酒
中間一根長條的冰塊
不過調酒滿普通的。
Hokkaido Uni Spoon $19
服務生大力推薦必點的北海道海膽湯匙
鮮甜的海膽加入塞拉諾火腿以及鵪鶉蛋
上面以青蔥點綴
吃起來還有淡淡的紫蘇味道
整體是好吃的不過火腿與鵪鶉蛋有點搶掉了海膽的風采與鮮甜。
Beef Tartare $19
這份是許多人拜訪必點的
最下面是壽司米
上面疊了一層生牛肉以及鋪上滿滿的鮭魚卵
鮭魚卵不會太鹹吃起來很清爽
旁邊附上海苔片可以包起來當壽司吃
很日式的感覺又很有創意!
Lo Mein $23
主餐點了使用來自北加州 Mendocino 海岸的海膽製作的培根蛋麵
海膽的味道非常濃郁
不過是整個融化進麵的作法
沒有實際上吃到新鮮或是炒過的海膽。
Pork Tonkatsu $33
另外一份主餐點的是炸豬排
酥脆的超大塊炸豬排上面擺上甜番茄與蔬菜
再淋上綠色的綠女神醬
整體還不錯。
Strawberry Shortcake Shaved Ice $13
最後甜點點了常常會變換口味的刨冰
現在是草莓蛋糕刨冰
草莓醬的地方很甜很可口
上面是濃郁的起司奶油以及草莓麵包脆塊
是不錯的飯後甜點。

有小孩,又要待在家防疫時怎麼辦?!
除了平常小孩會玩的東西,像是樂高積木、畫畫、拼圖、看書等,這裡也有一些我們為了保持’’家庭和諧’’會跟Egan玩的事情,提供給你們參考囉!
Including a lot of the “normal” kid things we do like play with legos, draw, puzzles, read books, etc… here are a couple things we’ve been doing to keep busy and sane at home.
-煮飯:
小孩很喜歡假裝煮飯,也很喜歡在廚房玩,所以就真的讓他們 (在你的注意力底下) 跟你們一起下廚玩。我會讓Egan幫忙洗菜、洗水果,然後在旁邊陪我切菜、炒菜,我們也會讓他醃食材,因為鹽巴多一點點少一點點其實沒有太大的關係,所以我會真的讓Egan拿他要的調味料放進去一個大碗裡面,然後他會用手指或是湯匙來攪拌均勻,最後我們會把肉或是海鮮放進去碗裡面讓他去按摩,把他的’’特製醬料’’全部都按摩進去食材裡面。
Cooking 101.
Kids love to play in the kitchen, so I will let Egan wash all of our veggies and fruits while I do the more adult stuff like chopping and frying. We also let him marinate our meats and seafood. Since it is OK if there is a little less or more salt/pepper/spices/oil, we let him actually shake the contents into a big bowl and then mix it up with his fingers or a spoon. And then we put the meat into his mixture (you may need to help a bit) and he can massage the seasoning into our meats.
記得要提醒小孩,醃完肉的手不能碰其他的東西,也不能偷吃喔。(因為雙手已經摸過生的肉)
Note: Make sure to constantly remind them that they can’t touch anything while they’re dealing with raw meats. And definitely no taste testing yet!
煮好放上桌的時候, 也可以大聲的宣布這道菜是小孩一起幫忙做的。他們會很驕傲也會很有成就感。
Bonus: When the food is actually cooked, tell everybody that your toddler is the sous-chef and helped with the cooking. It teaches them about their contributions and small achievements.

Tips two: Try to create movement in your food when possible. I stir the coffee so it has more texture on it when I shoot the photo.

오스트리아에서 비롯되었는데 비엔나커피라고도 해요~
아메리카노 위에 휘핑크림을 듬뿍 얹은 커피로
차갑고 달콤한 휘핑크림과 뜨거운 커피의 만남을 선사합니다.
생각보다 만들기가 너무 쉬우니 한번 만들어 드셔보세요!
應該至少都聽過一次的Einspänner
來自奧地利,又叫作維也納咖啡~
在美式咖啡上放滿鮮奶油
可以同時品嚐到冰甜的鮮奶油和溫熱的咖啡
作法比想像中簡單,做一次品嚐看看吧!
【아인슈페너】
준비물[약 250ml 유리컵 1개 분량] ▸
휘핑크림(100ml), 설탕(10g), 코코아파우더(약간)
원두가루(에어로프레스 스푼 1숟갈), 뜨거운 물(200ml), 얼음(약간, 생략가능)
*에어로프레스 없을 시 그냥 아메리카노 200ml정도 준비하세요
whipping cream(100ml), sugar(10g), , cocoa powder(a little)
coffee bean powder(AEROPRESS 1 spoon), hot water(200ml), ice cube(a little, it can be left out)
*If you don’t have AEROPRESS, just prepare Americano 200ml.
조리순서 ▸
① 에어로프레스로 커피 준비하기(물 100ml, 85°C)

② 휘핑크림에 설탕 넣고 2배가량 부풀어 오를 때까지 휘핑하기
③ 온도 조금 내려주기 위한 얼음(생략가능) 넣고 남은 뜨거운 물 100ml 부어주기(얼음 넣지 않을 때 물 양 조금 늘려주기)
④ 커피 위에 휘핑된 크림을 듬뿍 얹어주기
⑤ 마지막에는 코코아파우더 살짝 뿌려주기
식재료 비용 ▸ 총 1,000원이하
材料[份量約一個250ml玻璃杯] ▸
打發用鮮奶油(100ml)、糖(10g)、可可粉(少許)
研磨咖啡粉(愛樂壓湯匙1匙)、熱水(200ml) 、冰塊(少許,可省略)
*如果沒有愛樂壓,可以準備一杯200ml美式咖啡
料理順序 ▸
① 用愛樂壓準備咖啡(水100ml,85°C)

② 打發用鮮奶油加糖打發至兩倍左右
③ 放降低溫度的冰塊(可省略),並倒入剩下的熱水100ml(不放冰塊時稍微增加水量)
④ 在咖啡上倒滿打發好的鮮奶油
⑤ 最後撒上一點可可粉
食材費用 ▸ 一共1,000韓元以下(約台幣25元)

Daifuku is a rice cake stuffed with sweet filling.
お餅リメイクの皮は、牛乳加えてレンチン後、刻んだチョコとコーヒーも加えて混ぜる混ぜる混ぜる!
おたべみたいにそのまま食べてもいいけれど、中にホイップクリーム詰めたらそれは美味しい「カフェモカ大福」になります。
皮が固くならない程度に冷凍庫で冷やして食べると極旨です。
ちょっと溶けて生クリームがとろんとなっても美味しい♡
休日のちょっとした楽しみ^^

【Ingredients】4 servings
Cafe mocha Mochi:
2 piece Cut mochi cake(65g)
30g Dark chocolate,finely chopped
50g Milk
5g Instant coffee
50g Whipped cream
*Potato Starch Flour to prevent Mochi to stick to hands
【Directions】
Preparation: chop the chocolate
Divide Whipped cream into 4 round pieces.
Cool it in the freezer 20 mins.
①Cut the mochi into small pieces and immerse mochi in water.
②After a while,drain the water.
③Add the mochi and milk to a heat-resistant bowl.
Lightly cover the bowl with cling film and heat the mixture in a microwave for 1 minute 30 seconds.
④Take the mixture out and mix well with a wooden spoon.
⑤Again,microwave for 1 minute and mix well with a wooden spoon.
⑥Add chopped chocolate,Instant coffee and mix well.
⑦Spread out the katakuriko in a shallow container and Sprinkle extra Potato Starch Flour over the ‘Mochi’ as well.
⑧Remove excess Potato Starch from Mochi and divide into 4 portions.
⑨Flatten one portion, place the Whipped cream in centre and draw the edges up to enclose.
⑩Repeat with the remaining Mochi and Whipped cream.
Cool it in the freezer 10-15 mins.
【材料】4個
切り餅 2個(65g)
***必ず65gのお餅にしてください
ビターチョコ(細かく刻んでおく) 30g
牛乳 50g
インスタントコーヒー 5g
ホイップクリーム 50g
***市販のホイップクリームまたは生クリームに砂糖20gを
加えて固く立てる
*片栗粉
【作り方】
準備:チョコは細かく刻んでおく。
ホイップクリームは4つに丸くして冷凍庫で冷やしておく。
①お餅は小さく切り、水に浸して置く。
②少し置いてから水を切る。
③耐熱容器に餅と牛乳を入れてラップをして電子レンジ600wで1分30秒加熱する。
④すぐに木ベラなどでよく混ぜる。
***お餅をつぶすようにしっかりと混ぜること。
⑤もう一度ラップをして1分加熱し、また混ぜる。
⑥つぶし残しが無いように混ざったら、刻んだチョコとインスタントコーヒーを加えてよく混ぜ合わせる。
***不安な方は湯せんでチョコを溶かしてそこにインスタンコーヒーを混ぜ込んだものを加えてください。
⑦平らな容器などに片栗粉を広げ餅を置き、上からも振りかける。
***手につかないようにするため片栗粉を使います。
⑧これを4つに切り分ける
***多めの片栗粉は刷毛などで取り除きます。
⑨お餅を平たく伸ばし、中央に生クリームを置いて端を引っ張りながら優しく包む。
⑩4つ分包んだら、冷凍庫で10-15分ほど冷や
