* INGREDIENTS

A. Mascarpone custard cream

5 g gelatin leaves or powder
30 ml water
100 ml milk
100 ml whipping cream
4 egg yolks (74 - 80 gram)
60 g sugar
20 g all purpose flour
30 ml Rum
400 g Mascarpone (softened at room temperature)

B. Coffee rum syrup & biscuits

2 g instant coffee powder
80 ml hot water
20 ml Rum
30 Savoiardi/ ladyfingers

C. Chocolate mascarpone frosting

60 g chocolate (45 - 55% cocoa)
70 ml whipping cream
100 g Mascarpone (softened at room temperature)
2 ml vanilla extract

D. Other ingredients

10 g cocoa powder
10 g matcha/ green tea powder
30 g chocolate (45 - 55% cocoa)
20 g pistachio
