Kam's Roast is opening new express concept at Food Opera @ ION Orchard tomorrow (1 June 2021). They will dole out quality roasts and a medley of sides including roast duck, char siu, crispy pork and wanton noodles. Prices start from $6.80 for BBQ Pork Rice.

Cannot make up your mind what to have? Opt for the 4 Treasure Rice ($11.80) – a one-dish heaven for roast meat lovers. The 4 ‘treasures’ refer to Kam’s signature roast duck, soya sauce chicken, BBQ Pork and Salted Egg. Kam's legendary secret sauce is then drizzled over. Top up $5 to complete your meal with Wonton Soup and Poached HK Choy Sum.

Have your food to go or have them delivered via GrabFood, Deliveroo and foodpanda and enjoy them in the comfort of your own home.

They will also be introducing quality Lava Yolk Century Egg with Ginger from mid-June.

Everyone loves perfectly roasted meat. We were pleasantly surprised by Char Siu Lang at Jalan Bukit Merah, which serves pretty good charcoal roasted roasted meat. The young owner Ivan previously was doing insurance, then decided to come out and do F&B, so he took 2 years to learn and master roasting.

The char siew here is made with pork belly cut, charcoal smoked and caramelised to give it a deep colour and intense flavour. You can choose how fatty you want your char siew to be. Perfectly good on its own, I popped piece after piece before drizzling the char siew sauce over (which was supposed to be used for dipping) 😂.

They also serve juicy roasted chicken and sio bak too. Pair your roasted meat with their signature Hakka noodles tossed in lard and aromatic minced pork. Yums

Iekei Ramen for the first time in Kurashiki! I visited "Tsurunoya Kurashiki Miyamae" in Kurashiki City, Okayama Prefecture. At the first shop I visited this time, I received "pork bone soy sauce char siu men". I'm looking forward to seeing Iekei Ramen in a different environment than usual, so please have a look!

材料：
刀削麪6個
叉燒半斤
甜紅椒1個

處理：
1. 大火煲滾水，放刀削麪。
2. 滾起後，轉慢火煮10分鐘。
3. 甜紅椒，切小塊。
4. 刀削麪已煮了10分鐘，擎乾水，沖洗乾淨，再擎乾水。
5. 煲滾水，加入油1茶匙，灼紅椒2分鐘，保持光澤。
6. 過了2分鐘，紅椒擎乾水。

烹調：
1. 中火在鑊中燒熱油2湯匙。
2. 放刀削麪。
3. 炒了2分鐘，轉慢火，加入調味料：
a. 蠔油1湯匙
b. 生抽1湯匙
炒勻。
4. 轉慢火，加入老抽半湯匙，轉中火，炒勻。
5. 加入叉燒，炒勻。
6. 加入少許鑊尾油，炒勻。
7. 轉慢火，試一試味。
8. 加入老抽半湯匙。
9. 加入蜜糖1湯匙。
10. 轉大火，炒勻。
11. 加入紅椒，炒勻。
12. 完成，上碟，可享用。

Stir fried knife~cut style noodles with char siu:

Ingredients:
Knife~cut style noodles 6 Nos.
Char siu 0.5 catty
Bell pepper 1 No.

Preparation:
1. Boil up a pot of water, put noodles.
2. Turn to medium~low flame, boils for 10 minutes after boils up.
3. Bell pepper, cut into small pieces.
4. Knife~cut noodles has been boiled for 10 minutes. Hang dry. Rinse thoroughly. Hang dry again.
5. Boil up a pot of water. Add oil 1 tsp, soak the bell pepper for 2 minutes to keep the brightness of colour.
6. Hang dry the bell pepper after 2 minutes.

Steps:
1. Heat up oil 2 tbsp at medium flame in wok.
2. Put knife~cut style noodles.
3. Have already fried for 2 minutes, turn to low flame, add seasoning:
a. Oyster sauce 1 tbsp
b. Light soya sauce 1 tbsp
Stir well.
4. Turn to low flame, add dark soya sauce 0.5 tbsp. Turn to medium flame, fry well.
5. Add char siu, fry well.
6. Add little oil, fry well.
7. Turn to low flame, taste it.
8. Add dark soya sauce 0.5 tbsp.
9. Add honey 1 tbsp.
10. Turn to high flame, fry well.
11. Add bell pepper, fry well.
12. Complete. Put on plate. Serve.
