混ぜる回数も説明してるのでわかりやすいです。

生クリームを絞り入れる時も紙型のままですので破裂して生クリームが出てくることはかなり少ない方法です。

【ingredients】6.69in Paper mold
4　Egg yolk
20g Granulated sugar
50g Corn oil
90ml Milk
Vanilla essence a little
75g　Flour
3g　baking powder
4　Egg white
50g Granulated sugar
150ml heavy cream
20g Granulated sugar

【材料】17㎝紙型
卵黄(M)　　　　　 4個
グラニュー糖　　　20g
植物油　　　　　　50g
牛乳　　　　　　　90ml
バニラエッセンス　少々
薄力粉　　　　　　75g
ベーキングパウダー　3g
卵白(M)　　　　　 4個
グラニュー糖　　　50g
生クリーム　　　　150ml
グラニュー糖　　　20g

【作り方】
①卵黄にグラニュー糖を加えてハンドミキサーで白っぽくなるまで良く混ぜます。

②植物油を加えて良く混ぜて、混ざったら牛乳も同じように加えて混ぜてバニラエッセンスも加えます。

③薄力粉、ベーキングパウダーをふるいにかけて加えて、ホイッパーでよく混ぜます。

④卵白を少し泡立ててそこへグラニュー糖を3回に分けて入れながらしっかりと泡立てる。(冷蔵庫で冷やしておいたもの)
※卵白を泡立てる際のハンドミキサーの羽根は必ず綺麗に洗って、水も完全に拭いてくださいね。
水分や油分が付いてると泡立たないのでご注意をお願いします。

⑤③に泡立てた卵白を3回に分けて加えます。
(1回目はホイッパーで約20回、2回目もホイッパーで約25回、3回目もホイッパーで約35回、次にゴムベラで切るように優しく約35回混ぜます。)

⑥17㎝の紙型に入れて(すこし高い位置から入れると上手く入ります。)
空気と気泡を抜くためにお箸か竹串で何度か混ぜます。

⑦170℃に予熱したオーブンで35-38分焼いてケーキをさかさまにして完全に冷まします。

⑧生クリームにグラニュー糖を加えてホイップクリームを作ります。

⑨紙型からケーキを抜かずに6か所にお箸で穴をあけてホイップクリームをゆっくりと絞り入れて、冷蔵庫で2-3時間冷やします。
※絞りの口金は7mmを使用しています。

⑩紙型を切ってケーキを外して約40℃に温めたナイフで切り分けます。

注)卵の大きさや泡立て方で量が多くなる時もありますので、生地はシフォン型の8分目くらいまでに入れるようにして下さい。
ギリギリまで入れると、焼いている時にあふれる場合もあります。
