📍 Sipadan Island, Semporna
Such an exhilarating experience when this large school of Bumphead parrotfish (Bolbometopon muricatum) swam towards me! I took this video in Sipadan, in a dive site called Midreef.
Did you know that the Bumphead parrotfish can grow to lengths of 1.5 m (4.9 ft) and weigh up to 75 kg (165 lb)? This amazing species perform a very important function in their grazing – they are the gardeners of the reef, removing algae that compete with corals. This prevents the corals from being overgrown and becoming smothered. They spent much of the day nibbling away at the reef. The rock and coral skeleton ingested is ground up through their teeth and by molar-like teeth in their throats. The indigestible material is then defecated “pooped” out as smooth white sand. Yes, sand!

前幾天才說過我每天都只擔心肉吃不夠
事實上每天該吃多少蛋白質是有依據的
可以參考原文中的表格:
肥胖的人想要減脂,蛋白質攝取量在1.2-1.5 g/kg之間
體重正常的人想要增肌減脂,目標在2.2-3.3 g/kg之間
即使我們用較低的標準1.2 g/kg來算
一個60公斤的人每天就要吃72公克蛋白質
我舉個實際的例子,Costco賣的雞胸肉一包大約是400公克
換算起來裡面含蛋白質大約就是70多公克
(有買過的人應該知道一包的份量還不少)
把這包雞胸肉吃完大概就是一天的底線
所以,體重正常的人想要增肌減脂(2.2-3.3 g/kg)
每天就要吞下兩到三大包的雞胸肉
各位覺得自己有達到這個標準嗎?
因此我才說一般人都吃太少蛋白質、太多碳水化合物
當然在肉品的選擇也要注意,雞胸肉算是CP質很高的
因為蛋白質含量充足,而且油脂比較少
如果你想是吃肥肉或者油炸食品來補充蛋白質
那大概只會在身上養出一堆脂肪而已
總結:吃優良的蛋白質不會讓你變胖,OK?
(P.S.我不是生酮飲食喔,關於這點有空的話晚上再聊)
我每天需要多少蛋白質?
如果你在正常健康體重,活動量低,將目標設定在 1.2–1.8 g/kg (0.54–0.82 g/lb)。
如果你過重或肥胖,將目標設定在 1.2–1.5 g/kg (0.54–0.68 g/lb)。
如果你正常健康體重,活動量高,又要維持正常體重,將目標設定在 1.4–2.2 g/kg(0.64–1.00 g/lb). 如果是高體能活動的運動員,盡量將蛋白質目標設定接近2.2g/kg。
如果你正常健康體重,活動量高,又想要增肌減脂,將目標設定在 1.4–3.3 g/kg (0.64–1.50 g/lb)。
如果你正常健康體重,活動量高,又想減脂,將目標設定在 2.2–3.3 g/kg (1.00-1.50 g/lb)。
如果你懷孕,將目標設定在 1.66–1.77 g/kg(0.75–0.80 g/lb)。

This steamed rice cake is among the most popular street-foods in Vietnam. It's tender, soft yet a bit chewy texture goes perfectly with the grilled pork (also a part of the famous Bun Cha) and sweet & sour dipping sauce. INGREDIENTS
A. FOR THE RICE CAKE
250 gram or 2-1/2 cup rice flour
45 gram or 1/2 cup minus 1 Tbsp tapioca starch
45 gram or 1/3 cup minus 1 Tbsp potato starch
1.1 litre or 4-1/2 cup water
B. FOR THE GRILLED PORK
70 gr or 1/3 cup sugar with 150 ml (2/3 cup) hot water to make the caramel sauce
1 kg (2 lb.) pork
2.5 Tbsp fish sauce
2.5 Tbsp oyster sauce
50 gr shallots (about 5 - 6 large shallots)
15 gr garlic (about 2 - 3 large cloves)
C. DIPPING SAUCE AND OTHER INGREDIENTS
25 gr or 1-1/2 Tbsp sugar
15~18 ml or 1 Tbsp lemon juice
175 ml or 3/4 cup water
15~20 ml or 1~1.5 Tbsp fish sauce (to taste)
minced garlic and fresh pepper (a little to taste)
a bunch of fresh coriander
1 large cucumber - sliced
crispy fried shallots
* NOTES:
- You can make a "mould" like in the video with a hand stitch ring like this http://www.ebay.com/bhp/embroidery-ring and a piece of white cotton. Make the ring so that its size fits with the size of the pot that you use to boil water to steam the cake.
- Most of the ingredients like rice flour, tapioca starch can be found in Asian supermarkets.
- The amount of water for the batter in part A can vary depending on the quality of the flour. If the batter is too thick, the rice cake will be thick and hard so make sure to add enough water. Too thick batter also creates difficulties when you pour the batter over the cotton ring-mould.
- Always stir the batter very well before pouring another batch to prevent flour sinking to the bottom.

1 cup white or yellow pearl onions

quail eggs, boiled, peeled
1 packed Mi Quang noodle, cooked following instructions
Accompaniments:
• Rice cracker
• Raw vegetables (lettuce, bean sprouts, banana blossom, mint, perilla,...)

• green onion, green part, finely chopped
• Roasted peanut, crushed

I used a pressure cooker and slow cooker to cook the broth, but you can also make the broth in a normal pot. Let it simmer uncovered for at least 5 hours after adding all of the spices and flavorings. Happy cooking everyone!
