✈️ 香港人習慣喝湯養生,移民後怎樣煲湯?人在異鄉煲湯材料可能不易買,其實只要留意食材屬性,尋常食材亦能煲碗靚湯,有助強身防病!💪🏻

CheckCheckCin:陽光普照被視為好天氣,但熱邪過盛也會消耗氣和陰液,所以炎熱天氣下我們特別容易出暗瘡、頭瘡、喉嚨痛、發燒等上火症狀。如果所住地區溫暖又乾燥,身體需要一點點偏涼的湯水,宜選擇屬性偏涼的蔬菜入饌,例如番茄、西芹、青/白蘿蔔、白菜等,配搭具清熱解毒、消暑祛濕功效的綠豆,有助清熱解毒。
番茄 — 性涼,有生津止渴、健胃消食、涼血平肝功效,適合發熱口乾、食慾不振者食用,它亦有護膚美白的功效。惟注意番茄性涼,胃寒人士不宜食用,寒性痛經女士在月經期間勿吃,胃酸過多者不宜空腹食用。
番茄薯仔綠豆湯
功效:清熱健脾,紓緩炎熱天氣帶來的口乾、喉嚨痛、悶熱等症狀。
材料:番茄3個、薯仔2個、椰菜半個、西芹2細條、綠豆20克
做法:
1. 所有材料洗淨,番茄切件;薯仔去皮切塊;椰菜及西芹切塊備用。
2. 鍋中加入2000毫升水,放入全部材料,武火煮至水滾,調文火煮1.5小時,最後下鹽調味即可。

According to Chinese Medicine theories, the pathogenic factor can invade the body and exhaust the yin, and this is why we experience dry mouth and sore throat easily.
When the body cannot dissipate heat on time, yin-yang balance is disrupted, causing us to develop a heatstroke. Therefore, individuals who live in dry and warm areas should consume soups and vegetables that are cool in nature such as tomato, celery, green/white radish, Chinese cabbage, not forgetting mung beans, which can relieve the summer-heat and clear toxins from the body.
Tomato - cool in nature, has the effects of promoting fluid promotion, quenching thirst, strengthening the stomach, aiding digestion, cooling blood and calming the liver. Suitable for fever, dry mouth, those with poor appetite. It can nourish and whiten skin. But it is cool in nature making it not suitable for those with cold stomachs. Women with cold type menstrual pain should not eat tomatoes during menstruation. Those with gastric hyperacidity should not consume it with an empty stomach.
Tomato and potato soup with mung bean
Effects: Clears heat and strengthens the spleen, relieves dry mouth, sore throat, stuffiness and other symptoms caused by hot weather.
Ingredients: 3 tomatoes, 2 potatoes, 1/2 cabbage, 2 stalks of celery, 20g mung bean
Preparation:
1. Rinse all ingredients thoroughly. Cut the tomato into pieces. Peel the potato and cut into pieces. Cut the cabbage and celery into pieces.
2. Combine all ingredients with 2000ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 1.5 hours. Add salt to taste.

冬瓜消暑要留皮
每逢夏天都是吃冬瓜的最佳時候,因為冬瓜有清熱解毒、利水消腫、減肥的功效,夏天暑氣逼人,在街上走一圈已大汗淋漓,出汗容易使人耗氣傷津,宜適當清熱及補充水份。有時買到的冬瓜表皮帶有白霜,有些人以為發霉其實大錯特錯,冬瓜成熟後表皮會分泌蠟質,蠟質經過沉澱後便會形成白霜。但亦有冬瓜不帶白霜,這不代表冬瓜不夠成熟,其實是經改良後版本。有霜也好無霜也好,用冬瓜煲湯千萬不要削走冬瓜皮,因為冬瓜皮也有利水消腫的作用;冬瓜籽則有清肺化痰作用,肺熱人士例如咳嗽痰多,不妨連籽入饌。
清熱祛濕湯水小貼士:
適當地添加清熱祛濕功效的食材如土茯苓、綠豆、木棉花、粟米鬚等。
冬瓜淮山蓮子鵪鶉湯
功效:清熱祛濕,紓緩身體四肢困重、腫脹、小便偏黃、面油多等症狀。
紓緩神疲乏力、嗜睡、食慾差、睡眠不安寧等症狀。
材料:冬瓜(連皮)600克約2斤、新鮮淮山1根、鮮荷葉1/2塊、鮮蓮子80克、綠豆30克、赤小豆30克、花生20克、冰鮮鵪鶉2隻*
*素湯直接不下即可
做法:
1. 所有材料洗淨,冬瓜連皮切大塊備用。
2. 鍋中加入2500毫升水,放入全部材料,武火煮至水滾,調文火煮1.5小時,最後下鹽調味即可。

Keep Winter melon’s skin to clear heat
Summer is the best time to enjoy winter melon as it can dissipate heat and toxins, induce diuresis to alleviate edema, and aid weight loss. The summer heat can be torturous, causing people to perspire heavily and consequently leading to the exhaustion of the qi. Hence, it is important to take appropriate actions to clear heat and rehydrate the body.
Sometimes, the winter melons might develop a layer that resembles the hoar frost, which you might mistake as mold. That is actually not mold, but a waxy coat winter melon produced when it matures. There is also another type of winter melon that does not develop a waxy layer when matured, as it has been genetically improved. With or without the waxy coat, do retain the skin when making the winter melon soup, as the skin induces diuresis to alleviate edema; winter melon seeds are great for clearing lungs. Individuals with heat in the lungs, for example those who cough up phlegm, should consume the seeds altogether.
Tips to soup to clear heat and dispel dampness:
Appropriately add in ingredients such as smilax, green bean, kapok, corn silk.
Winter melon soup with Chinese yam lotus seed and quail
Effects: Clears heat and dispels dampness, relieves symptoms such as fatigue, heavy limbs, bloating, yellowish urine and oily face.
Ingredients: 600g Winter melon with skin, 1 Chinese yam, ½ fresh lotus leaf, 80g fresh lotus seed, 30 green bean, 30g rice bean, 20g peanut, 2 frozen quails*
(the quails can be skipped for vegetarian recipe)
Preparation:
1. Rinse all ingredients thoroughly. Cut winter melon into pieces. Blanch quails.
2. Combine all ingredients with 2500ml of water and cook on high heat until boiling Turn to low heat and simmer for 1.5 hour. Add salt to taste.
