胡椒排骨芥菜湯
材料:
排骨1斤
芥菜膽1斤
白胡椒粒2湯匙
薑2片
白果2湯匙
腐竹2塊
處理:
1. 排骨,用粗鹽醃4小時或以上。
2. 排骨,大火煲1煲滾水,出水2分鐘,擎乾水,清水沖洗乾淨,放入煲。
3. 白果,去殼,放碗中,加入滾水,放入微波爐,焗40秒,倒去滾水,清水浸,就可以容易去皮,放入煲。
4. 腐竹,清水洗淨,放入煲。
5. 薑,洗淨,拍鬆,放入煲。
6. 白胡椒,磨碎,放入煲。
烹調:
1. 加入清水4升落煲,大火煲滾。
2. 大火滾起後,轉中慢火,煲1小時。
3. 芥菜,切開一塊塊,逐塊清水洗淨。
4. 湯已滾起,轉中慢火,煲45分鐘。
5. 湯已滾了45分鐘,放芥菜,轉大火煲15分鐘。
6. 滾了15分鐘,完成,可享用。
Pork ribs soup with white peppercorns and mustard
Ingredients:
Porb ribs 1 catty
Mustard 1 catty
White peppercorns 2 tbsp
Ginger 2 slices
Ginkgo 2 tbsp
Bean curd 2 sheets
Preparation:
1. Pork ribs, season with cooking salt for 4 hours or more
2. Pork ribs, heat up a pot of water at high flame, soak for 2 minutes. Hang dry. Rinse thoroughly. Hang dry. Rinse with tap water. Put into pot.
3. Ginkgo, get it peeled. Put in a bowl. Pour boiled~up water in the bowl. Microwave for 40 seconds, pour away water. Soak with tap water, this will help to remove its skin. Put into pot.
4. Bean curd, rinse with tap water. Put into pot.
5. Ginger, ger it rinsed. Beat well. Put into pot.
6. White peppercorns, get it grinded. Put into pot.
Steps:
1. Heat up water 4L in pot at high flame.
2. Turn to medium~low flame after boils up. Cook for 1 hour.
3. Mustard, cut into slices. Rinse with tap water one by one.
4. Soup has been boiled up. Turn to medium~low flame. Cook for 45 minutes.
5. Soup has been cooked for 45 minutes, put mustard, cook at high flame for 15 minutes.
6. Soup has been cooked for 15 minutes. Complete. Serve.
