Lai Yee's Kitchen- Bubur Cha-cha aka bobochacha 摩摩喳喳
Today marks 13 years since my Poh Poh passed away. In honor of her, I am cooking this to remember her amazing tong shui soup. She cooked us loads of soup, tong shui (sweet dessert soup) and all kinds of Chinese food. One of the reasons why I enjoy cooking a lot as she was one of my inspirations and guru in cooking.
This is the first time I tried cooking this famous Nyonya's dessert BoBoChaCha 摩摩喳喳 aka Bubur Cha-cha.
The dish is pronounced “bo bo cha cha” or “mo mo cha cha“. In Malay, “bubur” means “porridge”, and “cha cha” means “well”. ... Each region has a variation of Bubur Cha Cha: some include banana, black eyed peas, colourful tapioca jellies, or yam. It is popular in Malaysia, Indonesia, Singapore, Thailand and Philippines too.
INGREDIENTS
• Sweet Potato 1kg
• Yam 1/2 kg
• Bananas 2 pcs (big size) or 4 small size
• Sago 1 cup or more
• Coconut Milk 3 to 4 cups (depending on the pot size)
• Pandan Leaves 8pcs (4 for color, 4 for soup)
• Water 3 litres
• Evaporated Milk 1 can
Potato Dough:
• Tapioca Flour 60g each bowl/colour
• Hot boiling Water 30g each bowl
• Food colouring or natural colour(which u can make)
「SEASONING」
• A pinch of Salt (it is up to u to add)
• 4 to 6 pcs Gula Melaka or Palm Sugar
I really love bobochacha.. it is like an all-time favourite dessert for many of us.
This is my first time but definitely not the last time. I want to keep on trying to make the best version. I like this one, but i believe i can make fun chewy tapioca to add in. Let's see what I can create soon.

Lala cooks lala.. which one is the cutest? Both fabulicious I must say! Hahaha.
So normally I fried lala with chili padi, garlic, onion and ginger slices. This time I just want to be adventurous and try blending all those ingredients with loads of basil leaves into a paste to cook and add my soya noodles in. Western ala Asian. Why not. Life is more fun that way kan!?
Ingredients :
. 1kg of Lala or any kind of clams
. 2 packs of basil
. chili padi - 5 to 7 pcs (put more if you like sizzling hot)
. one whole garlic
. one whole onion
. some ginger
. cut spring onions for garnishing or cook towards the end
. salt
. soy sauce
. oyster sauce
. cooking wine
. white pepper
. water
. oil
Add- on : Western pasta or any noodles or glass noodles
My kids love to eat lala. Lala always said WHY COOK ME, WHY EAT ME.. cute kan! She even told me : " Mama I am so famous, lala food, Lalamove, Lalapot, Lala this and that everywhere!" Me replied : ".............True" Hahaha Have a great evening all.

➢Mold 14 x 8cm / H8cm 800ml
You can also use an 18 x 8cm / H6cm mold.
80g (0.35 cup) soy yogurt
110g (0.56 cup) brown sugar
80g (0.73 cup) pecan nuts
1 carrot (140g) 5oz
80g (0.35 cup)Vegetable oil
1/2 tsp cinnamon
1 tsp vanilla extract
160g (1.28 cup) flour
1 tsp baking powder
1/2 tsp baking soda
-Optional-
Cardamom and nutmeg
200g (0.9 cup) cream cheese
40g (0.33 cup) powdered sugar
180°C(356F)50 minutes
Cut the surface of the cake, after 20 minutes.
Wrap the cake in plastic wrap and let it sit overnight.

Hello friends! Today we're going to share with you how to make the super fluffy but light in the texture American style pancakes.
The pancake's shape and structure varies worldwide. But fluffy American pancakes are on my A-list. Everybody loves pancakes because they're so easy to make, but NOT THAT EASY. I mean if you want to make the most delicious one.
So we did some research to find the recipe. New York Magazine has voted Clinton St. Bakery Co’s pancakes are the best in New York city twice, so no doubt, we tried their recipe. And we love it. They are rich in flavor but light in texture. Super Yummy. Their pancakes are famous for a reason.
In this video, we’ll share the secret of these pancakes step by step, and how to make the fluffy texture (almost like a cake). They are great for a weekend brunch, and we strongly recommend topping with maple butter and blueberries compote. Of course you can also add some crisp fried bacon with it, they are a classic American breakfast dream team forever :). Wow~so enjoyable. Every day should start like this.

How to make blueberry pancakes
☞ Yield: 8~10 servings, using ¼ cup to scoop the batter
✎ Ingredients
📍 pancake
all purpose flour 160g
milk 220g
baking powder 6g
granulated sugar 70g
salt 2g
unsalted butter 58g, melted
egg 2, M~L size
vanilla extract 2g
📍 maple butter
maple syrup 160g (about 1/2 cup)
cold unsalted butter 110g, cubed (about 1/2 cup)
📍 blueberry compote
fresh or frozen blueberries 178g (1 cup)
granulated sugar 22g (2 tbsp)
lemon juice 5g (1tsp)
✎ Instructions
📍 pancake
1. Sift flour and baking powder together into a large mixing bowl. Then add sugar and salt and mix well.
2. Separate egg yolks from egg whites. Add vanilla extract, milk and melted butter into yolks bowl, and whisk until combined.
3. Beat the egg whites by electric mixer or by hand with a whisk until foamy, then add sugar in 3 batches and continue whisking until they reach medium soft peaks.
4. Pour the egg yolk and milk mixture into the dry mixture, just mix until the flour is dissolved, the batter will be slightly lumpy. Don't over mix it.
5. Next, gently mix half of the whipped whites into the batter, using the whisk to mix from the bottom, then add the rest of the whipped whites and keep folding it in, but no need to fully incorporate.
6. Heat the griddle until hot about 190°C. Drop half cup of pancake batter on the griddle to test the temperature and let set. Once bubbles form and pop, flip it. If the color is nice, the heat is enough. (A common mistake many people make is they don't heat the griddle enough, which is why we need to test the first one.) BTW, if you prefer the crispy on the edge, you can grease the hot surface with a little oil or butter.
7. Add 1/4 cup pancake batter, as the pancake cooks, you will see bubbles start to form on top, once the bubbles pop and become holes, it's time to flip. (3~3.5 mins per side)
8. Repeat the process with remaining batter, you can add some blueberries on top to create fruit flavor. Cooking several pancakes at a time. Transfer cooked pancake to a plate and garnish with confectioners’ sugar on top. Serve warm with maple butter and blueberry compote. Enjoy! To keep the pancakes warm while you make more, you can preheat the oven to 50°C and transfer cooked pancakes in to keep warm.
📍 maple butter
1. Heat maple syrup in a small saucepan over medium heat.
2. Add cold butter to warm syrup (never bring to a boil), whisking until sauce is smooth and all of the butter is incorporated. Maple Butter can also be kept refrigerated for up to two months. Reheat before using.
📍 blueberry compote
1. Simply combine blueberries, sugar and lemon juice in a small pot over medium-low heat, stirring continuously.
2. Once cooked, simmer for 4-5 minutes, keep stirring until a thick mixture has formed.

As a disclaimer, my husband MANager Joe writes and creates the thumbnail so I was a bit #rolleye but hey! Let's have fun lah. (The reason behind this title is simply because I made a cameo in Marsha and Velvet's much loved hit "Sumandak Sabah" which has lyrics going "Sumandak Sabah ...mana ko mau cari? Semua lawa-lawa pandai masak nasi!")
Anyhoo...in light of the Kaamatan & Harvest Festival celebrations coming soon (Harvest Festival is a celebration to thank a bountiful harvest of rice) - I've themed our D'Varomas Live Cooking Show "Borneon with a Twist".

Why the following menu?
1. Lemonade is our a well-known favourite beverage of most Thermomix users. Plus it demonstrates the TURBO power of the TMX where we can grind the rock sugar to powdery goodness in just 2 seconds! Add 2 cut lemons (with peel intact) with cold water, TURBO another 2 seconds and voila! It's done! Popped an asam boi cause we Sabahans love our Kit Cai Ping (kasturi drink with asam boi) so this is the twist in our much loved beverage.
2. Sabah is known for it's seafood. Dip your mantou buns (Steam or fried) with your Kam Heong Prawns or Chili Butter Crab ... delish!
3. Aisyah shows us how EASY and healthier and CLEANER it is to cook rice using the "simmering basket method". No grain of rice is wasted and her easy to make sushi rolls are definitely going to be a hit amongst my kiddos!
and finally
4. Sup Ayam Lihing (Chicken Rice Wine) is a popular soup of the Kadazandusun community. Usually I would use Ayam Kampung, but I only had chicken breasts so I had to make the broth in advance. Add a bit of lihing or rice wine and hmmmmm. Heaven!
