Braised eggplants with minced grass carp meat
Ingredients:
Knife Supreme healthy peanut blended oil
Eggplant 2 Nos.
Minced grass carp meat 0.5 catty
Garlics 1 No.
Bread crumbs 50g (about a bowl)
Chili 3 Nos.
Preparation:
1. Season the fish meat:
a. Tapioca starch 2 tbsp
b. Oil 1 tsp
c. Pepper 1/4 tsp
d. Light soya sauce 1 tsp
e. Oyster sauce 1 tsp
Stir in one direction with a pair of chopsticks for 5 minutes until it turns sticky.
2. Prepare tapioca sauce:
a. Tapioca starch 1 tsp
b. Sugar 1/4 tsp
c. Light soya sauce 1 tsp
d. Oyster sauce 1 tsp
Add in water 200ml, mix well.
3. Garlics, get them peeled.
Chili, remove anchors. Remove seeds. Divide each one into 2 shares vertically. Dice it.
Garlics, chop well.
Steps (List 1):
1. Heat up oil 150ml at medium flame in wok.
2. Add in garlics, deep fry at medium~low flame.
3. Garlics have been deep fried into yellow colour, pick them up immediately. Drain.
4. Plain wok, no oil, add in bread crumbs, add in oil 1 tsp. Fry at low flame until it is crispy. Turn to low flame, add in appropriate amount of chili cubes.
5. Add in:
a. Black pepper salt 0.5 tsp
b. Salt 0.5 tsp
Fry well. Pour into a bowl.
6. Eggplant, rinse with tap water. Dry with kitchen towel. Dice in thick cubes horizontally. Make 3 light cuts on the eggplant. Put little tapioca starch on it. Put fish meat on top, press well. Put on plate.
Steps (List 2):
1. Heat up the garlics oil at high flame in wok.
2. Add in eggplants, fish meat faces down, fry well.
3. Fish meat has been fried into golden yellow, flip over and continue frying.
4. Add in half of tapioca sauce, heat up at high flame until the sauce becomes thick and eggplant has been softly cooked.
5. Pick up eggplants one by one on plate. Pour little sauce on top of them.
6. Bread crumbs and garlics are to be mixed well, put on side of the eggplant and little on top.
7. Chili cubes, put on top of the eggplant.
8. Complete. Serve

Been looking for one of these ergonomic office chairs because my back has been killing me and the Ergomeister FAEZ8ERG has been a dream. I totally get why even chiropractors and professional athletes love it! The full lumbar support just craaadles my back, much less back pain after the many zoom meetings. It’s also super sleek, the curves are so sexy and I really like that the name is at the back and not where my head is haha. The armrests can be adjusted vertically, rotated inwards and outwards, forward and back, you can also slide the seat in and out and it has a sweet recline. One small thing, the chair is still a little bit too high for me (I’m 5ft2) even at the lowest setting. I don’t mind that but if you are around that height, take note of that! This 8 series has German-engineered Premium Air-scape Mesh and the ventilation is also premium haha. Thank you @ergomeister!

Mummy said she’s on the verge of breaking down…
𝙎𝙡𝙚𝙚𝙥 𝙙𝙚𝙥𝙧𝙞𝙫𝙖𝙩𝙞𝙤𝙣. Woke up every 2 hours to pump/ breastfeed is really crazy. By the time I’m done, I’m probably left with another 30 mins or so for the next session. I’m not sure how some mothers can sleep in between sessions 😔 I skipped 1-2 session so that I can sleep but usually end up with engorged breast. I don’t even need any alarm to wake me up 😵💫
𝙁𝙖𝙩𝙞𝙜𝙪𝙚. On daily pain killer 💊 is a must for me in order for bae to do my wound dressing. It is cleaned twice a day. It’s an open wound, cut vertically on my existing scar. 🩸Fresh pink/ red flesh can be seen on my lower abdomen but so far I had probably only seen it less than 5 times. I left the details to hubby 🙋🏻♂️and he’ll summarize for me whether my condition is improving or worsen bcs I have very weak heart seeing “bloody-gruesome” wound like this. But so far, thankfully, it’s healing well. 🙏🏻 It’s been 2 weeks since, doc told me I need a minimum 1 month for the wound to “close up”. Let’s hope for the best!💯
𝘽𝙧𝙚𝙖𝙠𝙙𝙤𝙬𝙣. Despite staying indoor and ordered everything online, number of Covid cases is still on the high side. 😒 Hospitals are running out of bed, front liners are breaking down. Many committed suicide because of the continuous lockdown (failed gov). Rakyat are suffering. 💔 Me too, the need to socialize and to dine out on my fav food is so far-fetched (Impossible! Unrealistic!) with the current situation. But everyone in Malaysia has been like this since, what? last year? I even lost count of the time. 😢 But I know it has been like this for a very very very long time… Trapped at home for way too long felt like living in hell! Did we all just wasted our lives for the past 2 years waiting for our gov to make things better! Sigh… I only saw how things got worse! 😮💨
𝙋𝙤𝙤𝙧 𝘼𝙥𝙥𝙚𝙩𝙞𝙩𝙚. One of the reason is due to my wound too. 🤕 And with weaker body, contributes to weaker state of mind too due to restricted movement etc. Confinement food is also not what I enjoy when I was having poor appetite 🤢. Still prefer food which offer balance meals and variety. 👩🏻⚕️Yes, doc said I have no food restriction after I clarified with them. I even showered daily bcs of my visit to NICU and hospital for the first two weeks🏥, followed by my admission in hosp due to my csec wound. Hygiene is very important 🛀, especially during the pandemic. ⚠️ I do not want to bring any viruses home to my family. 🦠 Not at all.
𝙂𝘿𝙈. Gestational diabetes is high blood sugar (glucose) 📝 that develops during pregnancy and usually disappears after giving birth. I was on controlled diet 🍛 throughout my pregnancy and I will have to take another test this August to confirm if GDM still exist. And because of this, I’m also a lil bit depressed 😪 bcs I can’t reward myself with some good dessert or ice creams!🍦 This is the real zero quality of life when you don’t get to enjoy life up to your liking/ preference 🖤! Not when you’re a foodie right! Sorry for the zero update on my food ig @𝙨𝙝𝙚𝙚𝙖𝙩𝙨_𝙨𝙝𝙚𝙘𝙤𝙤𝙠𝙨 too! 🥵
I just hope all the bad and unhappy times will be over soon. 👎 This is not a rant, just a confession of what’s really going on in my pregnancy journey🤰🏻. Not all motherhood journey is a bed of roses. But comparing this to my cancer journey, this is definitely much better 🍀. Because out of the pain and misery, I have Isabelle with me 👶🏻. She’s healthy, sweet, adorable and quite manageable so far. Just a lil bit out of control when she’s hungry🍼! Hahaha! I’m mastering it soon on how to deal with her tantrum 😆 Just offer her the boobies🤱🏻!

三角形に包んだミニ春巻きをご紹介します!
お肉ではなくはんぺんでヘルシー♪
枝豆、エビ、チーズも入れてボリューム満点!

エビと枝豆のミニ春巻き
15個分
材料:
むきエビ 5尾
枝豆 30g
はんぺん 50g
モッツァレラチーズ(チェリーサイズ)15個
春巻きの皮 5枚
片栗粉 大さじ1/2
溶き卵 1/2個分
A薄力粉 大さじ1
A水 少々
塩 適量
サラダ油 適量
作り方:
1.むきエビの背わたを取り除く。 塩、片栗粉をまぶし水で洗い流して水気をよく拭き取り、小さめに刻む。
2.枝豆は塩を入れたお湯で1分半塩ゆでして、房と皮を取り除く。
3.ビニール袋にはんぺん、溶き卵、塩、(1)を入れ揉み込んで馴染ませ、冷蔵庫に10分程入れておく。
4.春巻きの皮は縦に3等分にする。
5.春巻きの皮の下の部分に(3)をスプーン1杯、(2)とモッツァレラチーズを置き、三角に巻いていき最後はAの水溶き薄力粉で糊付けしてしっかりと巻き終わりを閉じる。
6.フライパンでに油を入れ170℃まで熱し、きつね色になるまで揚げて完成!

Mini Spring Rolls with Shrimp and Edamame
Servings: 15 rolls
INGREDIENTS
5 shrimp (peeled)
30g edamame
50g hanpen (fish cake)
15 mozzarella
5 spring roll wrappers
1/2 tablespoon potato starch
1/2 beaten egg
A
1 tablespoon flour
Some water
Some salt
Some vegetable oil
PREPARATION
1. Devein the shrimp. Put salt and potato starch onto shrimp. Rise shrimp with water, then pat-dry with paper towels. Cut into small pieces.
2. Boil edamame in hot water with salt. Shell and peel.
3. Mix hanpen, the beaten egg, and the shrimp (1) in a plastic bag. Refrigerate for 10 minutes.
4. Cut spring roll wrappers vertically into 3 pieces.
5. Place a scoop of (3), edamame (2), and mozzarella ball on the bottom of the wrapper. Fold the wrapper into a triangle shape. Seal with A (mix flour and water).
6. Heat the vegetable oil in a pan to 170°C (338°F). Cook spring rolls until golden.
7. Enjoy!

焼きなすのディップ
2人分
材料:
なす 4本
Aおろしにんにく 小さじ2
Aレモン汁 大さじ1/2
A練り白ごま 大さじ1
A塩 少々
Aクミンパウダー 少々
オリーブオイル 少々
パプリカパウダー 少々
イタリアンパセリ 少々
フランスパン(ディップ用)
作り方:
1.オーブンを180度に予熱する。
2.なすを縦半分に切り、オーブンシートを敷いた天板に切った面を下にして並べ、180度で30分程焼く。
3.オーブンから取り出し粗熱が取れたらスプーンでなすを皮からはがしてザルにあげる。
4.(3)のなすをミキサーに入れAも加えて、なめらかなペースト状にする。
5.器に盛り、オリーブオイルを垂らしパプリカパウダーをふりかけ、ちぎったイタリアンパセリを散らす。
6.フランスパンを添えて完成!

INGREDIENTS
4 eggplants
A
2 teaspoons grated garlic
1/2 tablespoon lemon juice
1 tablespoon sesame paste
Some salt
Some cumin powder
Some olive oil
Some paprika powder
Some Italian parsley
Baguette
PREPARATION
1. Preheat the oven to 180°C (356°F)
2. Cut eggplants vertically into halves. Place on a pan lined with a parchment paper (face down). Bake for about 30 minutes at 180°C (356°F). Let cool.
3. Using a spoon, peel eggplants and drain. Squeeze the eggplants if needed.
4. Process the eggplants (3) and the garlic with a blender. Add A ingredients and process until smooth.
5. Place (4) on a plate. Put some olive oil, sprinkle with paprika powder. Add some Italian parsley on top.
6. Serve with baguette.
7. Enjoy!

雞肉釀尖椒
材料:
尖椒6隻
急凍雞柳1磅半
辣椒仔2隻
芫荽1棵
處理:
1. 雞柳,清水解凍。
2. 尖椒,切去椗,打直切開一邊,去籽。
3. 辣椒仔,切去椗,打直切開一邊,去籽。
4. 芫荽,切去根部,洗淨,切碎,保留尾段。
5. 辣椒仔,切碎。
6. 雞柳已解凍,倒去水分,加入粗鹽乸7分鐘去除雪味、腥味及加入少許鹹味。
7. 雞柳,清水洗淨,擎乾水,廚紙索乾。
8. 雞柳,1開2,攪碎。
9. 雞肉調味:
a. 生粉1湯匙
b. 油1湯匙
c. 胡椒粉少許
d. 生抽半湯匙
e. 雞汁1湯匙
撈勻。
10. 預備芡汁:
a. 豆豉醬半茶匙
b. 蒜蓉半茶匙
c. 生抽半茶匙
d. 生粉半茶匙
e. 雞汁半茶匙
f. 胡椒粉少許
加入清水200毫升,攪勻。
11. 免治雞肉,釀入尖椒至飽滿。
12. 辣味,加入少量辣椒碎入雞肉,攪勻,釀入尖椒至飽滿。
烹調:
1. 大火在鑊中燒熱油2湯匙。
2. 放尖椒,雞肉向下,轉慢火慢煎,用鑊鏟輕手壓一壓,隔去油分。
3. 加入一半芡汁,冚蓋炆6分鐘。
4. 加入餘下的芡汁,大火滾起。
5. 完成,上碟,可享用。

Preparation:
1. Chicken fillet, defrost with tap water.
2. Bell pepper, cut the anchor. Halfly cut vertically. Remove seeds.

5. Chili, chop well.

7. Chicken fillet, rinse thoroughly. Drain. Dry with kitchen towels.
8. Chicken fillet, divide each one into 2 shares. Blend it.
9. Season the chicken:
a. Tapioca starch 1 tbsp
b. Oil 1 tbsp
c. Pepper little
d. Light soya sauce 0.5 tbsp
e. Chicken sauce 1 tbsp
Mix well.
10. Prepare sauce:
a. Black bean sauce 0.5 tsp
b. Garlics sauce 0.5 tsp
c. Light soya sauce 0.5 tsp
d. Tapioca starch 0.5 tsp
e. Chicken sauce 0.5 tsp
f. Pepper little
Add in water 200ml, mix well.
11. Minced chicken meat, totally stuff in the bell pepper.
12. Spiciness, add in little chopped chili into chicken. Mix well. Totally stuff in the bell pepper.
Steps:
1. Heat up oil 2 tbsp at high flame in wok.
2. Put bell pepper in wok, chicken meat faces down. Turn to low flame, continue frying. Press the pepper lightly with the wok shovel. Filter the oil as well.
3. Add in half of the sauce. Cover up the wok and braise for 6 minutes.
4. Add in the remaining sauce. Heat up at high flame.
5. Complete. Put on plate. Serve.
