(不需太認真的)La Liste 全球1000最佳餐廳榜單公佈

早上起床收到新聞稿, 法國外交部全力支持搞出來對抗Best 50, 可是關注度, 公信力和影響力都不大的全球最佳1000家餐廳榜單La Liste 2021公佈了...

基本上這是一份辦了第一屆就有點辦不下去, 媒體不怎麼報導, 入選的餐廳主廚通常無感, 沒甚麼人討論(所以也不會有爭議), 然後過目即忘的榜單, 所以真的不用太認真...

從第一屆開始我都是帶著看熱鬧的心態看排名的. 不過今年不一樣, 因為今年的熱鬧更有看頭, 因為去年10月, La Liste把Best 50的女皇Hélène Pietrini挖來主持, 希望讓這個榜單起死回生, 力搏Best 50(我看很難), 特別是今年又是餐廳都還在關門當中的法國美食年.

廢話少說, 先來看看前10名吧(其實一般人只會記得前3名, 10名之後就不會有人記得了啦):

1. Guy Savoy 巴黎, 法國. (當然一定要是法國啊)

2. Le Bernardin 紐約, 美國

3. Ryugin龍吟 東京, 日本

4. Sugalabo 東京, 日本

5. L’Arpège 巴黎, 法國

6. Martin Berasategui Lasarte-Oria 西班牙

7. Le Louis XV 摩納哥(Alain Ducasse)

8. 吉兆 嵐山本店 京都, 日本

9. 鰭 齋藤 東京, 日本

10. L’Ambrosie 巴黎, 法國.

就是日本法國各占一半, 然後找一家西班牙, 一家美國當花環裝飾一下. 我就不多評論了.

可是我是傲驕的台灣人, 比較關心台灣餐廳有無入榜啊.

有呢. 出現次序如下:
祥雲龍吟 Taipei City, China
桌藏 Taiwan
少帥禪園 Taiwan
紫艷 Xinyi District, Taiwan
頤宮 Taipei, China
態芮 Taiwan
請客樓 Taiwan
RAW Taipei China.

就是台北米其林2-3星列出來. 可是除了龍吟, 其他日本餐廳都沒有(天本, Longtail, Logy…). 最妙的是, 大家注意到了吧? 餐廳後面標示的城市國家不盡相同. 顯然是不同的人推薦填表, 主辦單位照單複製貼上; 不然就是主辦單位上網搜尋的結果. 還有, 主辦單位顯然沒注意到米其林到台中去了…

總之, 不是很嚴謹的標示.

1000家裡還有剛剛才換主廚的法國兩星餐廳La Bastde de Capelongue; Yannick Allèno去年九月才接手的La Table de Pavie (St-Emilion); 換住址尚未開幕的L’Astrance…

所以我真的不知道, 在去年全球籠罩在疫情下多數餐廳沒開的狀況裡, 這些投票的評審是怎麼投的.

The regular uncle of the Emerald red pork rice restaurant. It's so delicious. 💥 Who would think that a small alley like Soi Sukorn 1 would have a legendary crispy pork rice restaurant that has been opened for over 70 years? If you try it once, you can't help to come back 🤤 with original taste. Forwarded from father's generation, especially crispy pork and water. Special recipe that makes this small shop become a famous restaurant in the middle of the city where people stop by. Keep eating ✨

Mr. Wanlaphakaewsiromark or Piak, the owner of the Emerald red pork rice restaurant inherited this shop from father Piak. He told the beginning of this shop, ′′ I was born. Father is selling it. He is Chinese. But Jiw when he uses the stove. The battery is gone. Both red pork and crispy pork and goon ′′ 🤩

The highlight that makes this crispy pork rice restaurant still take care of customers. Brother Piak said that ′′ the shop will keep the same standard. The taste is the same since the father sold it. 👍 and everything is grilled with the charcoal stove as usual. No change. The water is used by using it. All the same formula. It makes customers like it. It's mouth to mouth ′′ 😍

The great menu that all customers speak with the same voice. No matter where they turn, order to eat cuddle at every table. It's ′′ crispy pork ′′ 🐷 for only 40 baht ✨ One of the special things that make. Crispy pork from Emerald's shop is different from other restaurants. Crispy pork here will use grill to make charcoal grill smell better than frying and soft inside. It's not dry as we used to eat. The water is not normal because it's braised with Chinese medicine. It's sweet. Yeah 🤤

The shop's boiled menu is not allergic. Stewed duck, lemon, pickled lemon, boiled papaya, pork bone and stomach. It's only Wednesday and Sunday. 🤤 All bowls are the same price at 35 Baht. Other days, there will be a duck, minced lemon, hatch and papaya soup with pork bone. Let's keep it fluent. 😋

Even though I have sold for more than 70 years, the Emerald shop still cares about both raw materials and the process of doing the same. It doesn't change. 😍 Plus, selling for less than one hundred baht. 🤩 Brother Piak sincerely said, ′′ Live with small profit. Sell it. A lot of them. Pigs are expensive now. But it hasn't risen the price

Even the Covid situation has made the shop less customers in the past, but now the Emerald Red pork rice restaurant starts to come back to be jolly because they can eat at the shop. ✨ alcohol hall gel for customers. All employees wear hygienic mask. Protected and it tastes good. Same price! 👍 If you want to go to eat, miss or want to try to know how special this restaurant is. You can stop by. Brother Piak also said that there is a new open branch at Soi St. Louis. The owner is the 3th generation heir. Which is the son of Brother Piak.

If you pass by, whether it's Sukorn 1 or St. Louis Soi. Let's visit to try it once and you will know how satisfying the legendary crispy pork is. Even the Emerald color shop looks like a small shop. It gives special taste. I can't wait to see what I eat. From crispy pork to soup! 😋

Senegal name comes from Portuguese that means part of the water.
Due to the west land of the country adjacent to the Atlantic Ocean.

Senegal Capital called ′′ Dakar ′′ located west of the country and west of Africa.

Location is conducive to maritime trade
Dakar becomes the center of West Africa's major trade.

The first nation to set up a trade station is Portugal, the world colonial in the early era.
To exchange goods with African capitalists
Especially ′′ slave labor ′′
To apply to labor in Brazilian cane farm, Portugal colonies in those days.

Slaves in the African continent will be brought to Dakar.

France lays the foundation for Senegal as a trade goal to Africa.
Build a railroad between Dakar and St. Louis for shipping.

Also laying the education foundation for locals
To help with product trade
By the founding of the University in Dakar and St. Louis

That's why Senegal uses French in government language.
And use Saefa fringe as the main currency of the country.

And then the 5 century slavery trade ended in mid 19th century.

Later in July Prof. 1960 Senegal is also free from the French colony.
Been ruling the country with president and local government since then.

Even Senegal is a major economic hub of West Africa.
But due to over half of the country, the upper part is in the Sahara Desert.
Making space for farming is limited
So relying on large amounts of foreign food imports and energy.

Assembled with main export products like mineral phosphate. Products from peanut oil fishery are low value.

Government loaned a lot of foreign debt to spend.
And intervene in domestic product prices to low levels.
Senegal is missing the account balance. Keep walking.

Poor in the year. Prof. 1994 Senegal government needs economic reform.

Starting from decreasing 50 % of Zefa's money, causing domestic inflation to 32 % immediately because imported products have higher prices.

From the beginning Senegal used a fixed exchange rate tied to the Euro, it changed to the floating exchange rate.
Reducing government price interventions
And receive subsidy from IMF and other countries like France, USA.

Even the economy can move on.
But Senegal is still missing the account balance. Keep walking.
From relying on foreign imports and subsidies all the time.

Year 2016, lack of accounting. 4.2 % of GDP.
Year 2017, lack of accounting. 7.3 % of GDP.
Year 2018, lack of accounting. 6.9 % of GDP.

Senegal challenge right now
How to manage resources and value goods in the country
To be more dependent on yourself.
No need to wait for foreign aid all the time.

From Senegal's story, a lesson that we learned.
Although most African countries now have better status from the past with the slave trade.
But these countries are going to have a small economic size.
Because of lack of exportable product development at high value
And rely on importing from foreign goods

Most developed countries are the opposite.
Importing products will be imported to produce high value goods to export.

Trick it's up to what these countries do
To be free from this problem
Which, if possible, will eventually make the economy equal to other countries..
