Roast Leg of Lamb with Rosemary & Mint Sauce- Neelofa Mohd Noor Neelofa
BAHAN - BAHAN:
2.5kg kaki kambing tanpa tulang
Perapan:
2 sudu besar madu
2 sudu besar Dijon mustard
2 sudu besar daun rosemary segar- dicincang
1 sudu besar biji lada hitam
1 sudu besar cuka balsamic
2 sudu teh Tabasco
1 sudu besar parutan kulit lemon
5 ulas bawang putih- dicincang
1 sudu teh garam
Minyak zaitun/jagung
Kaedah:
1. Sebatikan madu, mustard, rosemary, lada hitam, parutan kulit lemon, cuka balsamic, Tabasco & garamI. Gaulkan & sapu rata pada kaki kambing. Perap selama 2-3 jam di dalam bekas yang bertutup.
2. Letakkan kambing di atas rak pembakar & bakarpada suhu 200*C selama 20 minit kemudian kurangkan suhu ke 180*C & bakar sehingga masak sempurna. Rehatkan selama 10 minit sebelum dihidangkan
**Waktu membakar: 25 minit untuk setiap 1/2 kilo daging.
Sos Pudina:
Seiikat besar daun pudina- dicincang halus
Garam secukupnya
1/4 cawan air mendidih
1/4 cawan cuka putih
Gula secukup rasa
Kaedah:
1. Larutkan gula & garam bersama air panas & biarkan sejuk.
2. Masukkan cuka & daun pudina. Biarkan selama 20 minit sebelum dihidangkan supaya rasanya sebati.

6 lamb chops
3~4 garlic cloves
1 onion
1tbsp moroccan spice
300ml chicken stock
1tbsp tomato paste
Add pepper to taste
Add salt to taste
A half can of chickpeas
150g dates
18 black olives
1/2 lemon
A little bit of coriander

羊排 6根
大蒜 3~4瓣
洋蔥 1顆
鷹嘴豆 半罐
椰棗(或蜜棗) 150g
雞高湯 300ml
黑橄欖 18顆
香菜 適量
調味料:
濃縮蕃茄醬 1大匙
摩絡哥香料 1大匙
胡椒 適量
鹽 適量
檸檬 半顆
摩絡哥香料食材:
2小匙薑粉
2小匙荳蔻粉
1小匙肉桂粉
1小匙多香果粉
1小匙芫荽子粉
1小匙薑黄粉
1小匙肉豆蔻粉
1/2小匙卡宴辣椒粉
1/4小匙丁香粉
1/2小匙八角粉
1小匙黑胡椒粉
(以上混合,放入瓶中冷藏可保存1年)
步驟:
1.在不鏽鋼鍋中放入特級橄欖油,熱油後放進羊排兩面煎黃後取出備用。
2.以鍋中的油炒香洋蔥後加入蒜末和香料,煮約2分鐘。再加入雞高湯、濃縮蕃茄醬、鹽和胡椒,小火煮約20分鐘。
3.加入羊排、鷹嘴豆、橄欖和蜜棗(或椰棗)放進烤箱中以200度燉約20分鐘後加入檸檬汁拌入香菜
