※I used Fresh Eruka Lemon which is a kind of green lemon from Taiwan.

吉利丁粉 powdered gelatine 12g
冷水 cold water 60g

▎檸檬醬 Lemon Cream ( for 7cm tarts 10pc )
奶油 Butter 140g
全蛋 Eggs 100g
砂糖 Sugar 110g
檸檬汁 Lemon Juice 80g
檸檬皮 Zest 2pc
吉利丁凍 Gelatine mass 8g

▎檸檬泡泡 Lemon Meringue
飲用水 water 107g
砂糖 Sugar 93g
檸檬汁 Lemon Juice 100g
