"ไข่ไก่สีดำ มันเป็นไปได้อย่างไร"
วันนี้ ทางเพจ "อิอ้น ด้นสด" ได้โพสต์ภาพจากรายการทีวีของญี่ปุ่น ที่ทดลองให้แม่ไก่กินอาหารที่มีสีดำ เป็นเวลา 2 สัปดาห์ พบว่าไข่ที่ได้ออกมานั้น ตอกแล้ว ส่วนที่เป็นไข่แดงกลับกลายเป็นสีดำสนิทอย่างน่าแปลกใจ .... มันเป็นไปได้อย่างไรกัน ?
วันนี้เพจท่องเที่ยวอย่าง อิอ้น ด้นสด ได้โพสต์เรื่องการทดลองไข่ไก่ในรายการทีวีประเทศญี่ปุ่น ( https://www.facebook.com/eontdontsod/posts/1899966236886965 ) ซึ่งเค้าอยากรู้ว่า ปรกติไก่จะไข่ออกมา แล้วส่วนไข่แดง (yolk) จะเป็นสีส้ม แต่ถ้าให้ไก่กินอาหารสีดำ ไข่ที่ออกมาจะยังเป็นสีส้มเหมือนเดิม หรือกลายเป็นสีดำ
ในรายการไม่ได้ระบุว่าอาหารสีดำที่ให้ไก่กินนั้น คืออะไรแน่ แต่ไก่ก็ได้กินเข้าไปจนครบ 2 สัปดาห์แล้ว ซึ่งทางรายการก็เก็บไข่มาตอกโชว์ พบว่าส่วนไข่แดงนั้นกลายเป็นสีดำ ส่วนไข่ขาวนั้นเป็นสีใสๆ เหมือนเดิม .... ยิ่งถ้าเอาไข่ที่ได้จากแต่ละวันไปต้มผ่าดู ก็ยิ่งเห็นชัดถึงลักษณะของการที่สีดำนั้น ค่อยๆ ซึมเข้าไปในส่วนไข่แดง จนกระทั่งดำทั้งใบในที่สุด
เรื่องนี้ไม่ได้แปลกมากอะไรนะ สีของส่วนไข่แดง (yolk) นั้นได้รับผลโดยตรง จากอาหารที่ไก่กินเข้าไป ยิ่งพวกไก่ที่เลี้ยงแบบตามมีตามเกิดของชาวบ้าน สีของส่วนไข่แดงจะยิ่งแตกต่างกันไป ตั้งแต่สีออกขาว เหลือง ส้ม แดง หรือแม้แต่เขียวมะกอด ขึ้นกับอาหารที่มันได้กิน
ปรกติแล้ว เกษตรกรจะให้ไก่กินอาหารที่มีองค์ประกอบเป็นสีเหลือง เช่น พวกแคโรทีน หรือ พวกแซนโทฟิลล์ เพื่อทำให้ส่วนไข่แดงนั้นมีสีสันสดสวยขึ้น ดังนั้น สีของส่วนไข่แดงที่ต่างกัน ก็ไม่ได้จำเป็นที่จะบอกถึงคุณภาพของไข่ว่ามีคุณค่าทางอาหารสูงกว่ากัน (เช่น ถ้าสีเข้มเพราะใช้แคโรทีน ไข่นั้นก็น่าจะมีวิตามินเอสูงขึ้น แต่ถ้าใช้แซนโทฟิลล์ ก็ไม่ได้มีคุณค่าอาหารสูงขึ้นอะไร)
แต่ถ้าจู่ๆ เกษตรกรเลี้ยงไก่ แล้วไข่ออกมาเป็นสีดำโดยไม่ได้ให้อาหารอะไรที่ผิดปรกติไป อันนี้เป็นสัญญาณเตือนว่าอาจเกิดปัญหากับสุขภาพของแม่ไก่ตัวนั้นๆ ได้ เช่น อาจจะมีการแตกของเส้นเลือดในระบบทางเดินอาหารของไก่ หรือมีการติดเชื้อติดปรสิตต่างๆ ได้ ยิ่งถ้าไข่ดำนั้นมีกลิ่นเหม็นเน่าด้วยนี่ ก็ใช่เลยนะ (ดูตัวอย่างใน https://www.backyardchickens.com/…/help-my-chicken-is-layi…/)
กลับมาที่ "ไข่ไก่ดำ" จากรายการทีวี มีคนสงสัยว่ามันกินได้มั้ย อันตรายมั้ย ผมว่าก็คงขึ้นกับสารสีดำที่เอามาให้ไก่กินแหล่ะ ถ้าเป็นสารเคมีที่ไม่ได้ไว้ใช้ทำอาหาร ก็อาจมีอันตรายได้ ไม่ควรกินนะ
ส่วนคำถามบนเพจ "อิอ้น ด้นสด" ที่ว่า ถ้าให้ไก่กินอาหารสีอื่น เช่น ม่วง เขียว ฟ้า แดง ชมพู ฯลฯ มันจะเปลี่ยนตามด้วยมั้ย ... ผมคาดว่ามันจะเปลี่ยนครับ แต่ก็คงต้องลองทดลองพิสูจน์ดูนะ
