印式燴茄子 Brinjal Masala

印式茄子感覺有幾分似魚香茄子，當然是兩種菜式！沒有了肉碎，卻加入了芝麻、香草等材料，味道香濃入味，感覺相當不錯。

I did some research on the dish. Brinjal masala is a northern Indian dish popular among locals. Eggplant Masala is a vegetarian Indian dish that is a mixture of eggplants, chopped tomatoes, spices, and herbs.

The dish had a rich flavor and great aroma as garlic, ginger, red onion, and spices were added. This recipe could be served as a main dish or side dishes.
