<材料>
・醤油 大2
・酢 大2
・水 大2
・砂糖 大1.5
お好みで ごま油、すりゴマなど
<作り方>
1. 材料を鍋に入れて砂糖が溶けるまで火にかける
2. 最後にお好みで、ごま油、すりゴマ、ネギなど加える
【寿司酢】(1.5合分)
<材料>
・酢 大2
・砂糖 大2.5
・塩 小1
・粉末昆布出汁 小1/2
<作り方>
材料を合わせて、電子レンジで加熱して溶かしておく

・Soy sauce 2tbsp
・Vinegar 2tbsp
・Water 2tbsp
・Sugar 1.5tbsp
(How to make)

My quick take on Top TEN MARKET NEWS and TOP 30 STOCKS to buy this Monday.
1. The whole global stocks are on steroid. Climbed to another amazing record territories as reflected by MSCI All World which hit a six year high and Dow Jones Industrial which shot to all-time-high of nearly 17,000 level.
2. The Federal Reserve twin bullets i.e. bullish assessment of the economy and ultra-low interest rate are the biggest bullish driver for the stock market.
3. The Fear Index (Wall Street Volatility Index VIX) fell to the lowest levels since February 2007 suggesting high complacency and short term bubble in the global market, induced by USA overbought rally and Federal Reserve loose monetary policy.
4. The whole world market miraculously ignore the continuous violence in Iraq and Ukraine-Russia tension. Barack Obama told Congress that he does not need their approval for any action in Iraq and Russia, suggesting more uncertainties in Iraq and Russia. As a result, brent crude oil settled at a nine-month high of USD115.06 a barrel. Gold however benefited the most from the geopolitical tension after hitting a two month high, up 3.1 %, the biggest one-day gain in eight months.
5. FBMKLCI staged its one-month-best-session on Friday, 20th June, shot 10 points to close above 1880 level. After carving out a tight 1860-1880 trading range over five weeks, FBMKLCI finally break above the 1880 resistance level and now looks poised for a retest its all-time-high near 1890 level. Ringgit also hit the strongest level against USA Dollar (3.198, highest year-to-date) before depreciating lower to 3.2190.
6. Local technology shares is the strongest (up 2.1% w-o-w), raising the prospect that solid USA economy may benefit the most to local exporters and tech stocks with strong rallies seen in key technology blue chips such as Unisem, Globetranoics, MPI, Inari and Vitrox Berhad.
7. Bank Negara is expected to raise the interest rate (OPR) by 25 basis points (a quarter of one percent) from the current 3.0% to 3.25% by the next MPC meeting scheduled on July 10. The Malaysian economic growth (6.2%) in the first quarter of this year is the fastest in one year and therefore has fuelled expectation that interest rates in Malaysia has finally bottomed.
8. Facebook suffered its worst server crash when it was unavailable for half an hour suggesting crazy global demand and over capacity. Facebook lost USD1mil as the outage affected the website, smartphone and tablet apps worldwide. Facebook price however continue to rally strongly to USD65.
9. Last but not least. Poor old England are ON THE VERGE of being knocked out of the World Cup after an embarrassing loss to Uruguay, despite two incredible misses from Wayne Rooney. Spain dream also crashed when they lost to the fierce Chile. Both England and Spain are global bookies favourite. Loss and bad national mood can spill over into the England/Spanish stock market and can wipe millions off the stock market. Both FTSE 100 and IBEX Index have narrowly retreated from the six year high of 6,900 and 11,200.
10. Overall, expect bulls to dominate Bursa and FBMKLCI should eventually march higher towards its the psychology 1900 level by July 2014. Top FIVE strongest sector in order : Technology, Trading Services, Construction, Properties and Plantation. Worst sector is Consumer and Industrial Product.

油揚げ 4枚
だし汁 300ml
しょうゆ 大さじ2
砂糖 大さじ2
みりん 大さじ2
■酢飯
ごはん(かために炊く) 2合
米酢 50ml
砂糖 大さじ3
塩 小さじ1
■トッピング
桜でんぶ
きゅうり(スライス)
枝豆
しば漬け
いくら
ゆでえび
錦糸卵
1.いなりを作る。油揚げの上に箸を転がして内側を離れやすくし、横半分に切って袋状に開く。
2.鍋に湯を沸かして(1)を入れ、3分ほど茹でて油抜きをする。粗熱を取り、手で挟んでぎゅっと水気を絞る。
3.鍋に煮汁の材料を入れて火にかけ、煮立ったら(2)を入れる。落とし蓋をして弱火で15〜20分煮詰める。煮汁が半分ほどになったら、火からおろして粗熱をとる。
4.酢飯を作る。小さめのボウルに米酢、砂糖、塩を加えて混ぜ合わせる。
5.ボウルに温かいごはん、(4)を加えて、しゃもじで切るように混ぜ合わせる。8等分にして俵形に握る。
6.(3)の切り口を内側に折り込み、酢飯を詰める。
7.酢飯の上に、トッピングを彩り良く飾りつけたら、完成!

Mr. Yabatan’s Special Inari Sushi
Makes 8 pieces
INGREDIENTS
4 aburaage (fried tofu)
300 milliliters dashi stock
2 tablespoons soy sauce
5 tablespoons sugar, divided
2 tablespoons mirin
2 cups cooked sushi rice
1 teaspoon salt
50 milliliters rice vinegar
Optional Toppings
Boiled shrimp
Shiso leaves
Salmon roe
Sliced cucumber
Thinly sliced tamago
Pink fish floss
Edamame
Shibazuke pickles
PREPARATION
1. Roll over the aburaage with a chopstick to separate the layers inside. Cut in half crosswise. Carefully open the tofu from the cut side to make pouches.
2. Bring a large pot of water to a boil. Add the tofu pouches and boil for 3 minutes to remove excess oil. Drain and pat dry.
3. In a large pot, combine the dashi stock, soy sauce, 2 tablespoons of sugar, and the mirin. Stir to combine and bring to a boil over medium heat.
4. Add the tofu to the broth. Lay a parchment paper lid directly on top of the tofu and simmer for 20 minutes, until the broth is reduced by half. Remove from the heat and let cool.
5. Add the rice to a large bowl. In a small bowl, combine the remaining 3 tablespoons sugar, the salt, and rice vinegar. Stir to combine, then add to the rice and mix well.
6. With wet fingers, shape the rice into 8 cylinders.
7. Carefully stuff each rice cylinder into a tofu pocket, tucking the edges of the tofu around the rice.
8. Garnish with your toppings of choice.
9. Enjoy!

We made character inari for the first time in a while. Unlike before ( https://youtu.be/F_UCT4WZeXU ), we tried using matcha to decorate it like a frog.
If you eat these before a track and field tournament, you might be able to hop, skip, and leap like a frog and get a good score!
*Recipe* (10 frogs)
1. Cut 5 pieces of fried tofu in half.
2. Open them up and make it into a bag-like shape.
3. Pour plenty of boiling water over them, drain the oil, and keep in the net.
4. Dissolve 5 grams of matcha in 100 grams of hot water.
5. In a pot, add step 4, 30 grams of sugar, 35 grams of mirin and 23 grams of white dashi soup stock and bring to a boil.
6. Arrange the lightly drained step 3 in the pot and simmer until it soaks up the flavoring.
7. Once it's been simmered until there's only a small amount of broth left, take the pot off of the heat.
8. Put in a storage container and let it rest (About one night in the fridge).
9. Make vinegar rice with 2 cups of rice that is cooked on the hard side.
10. Divide and mold the rice into 10 pieces (one piece is approximately 65 grams).
11. Take the fried tofu from step 8, fold inward, and put step 10 inside.
12. Prepare decorations with thinly sliced kamaboko (fish cake) and seaweed.
13. Use ingredients from step 12 to decorate step 11. If it doesn't stick well, mayonnaise works well as a glue.
14. Finished. "Mr. Frog your complexion doesn't look too good, you know?" "It's my natural color!"

いつもと違った抹茶味でカエルさんのデコにしてみました。
陸上競技大会の前に食べたら、カエルのようにピョンピョン飛んで、良い記録がでるかもしれません。
*レシピ*(10カエルさん)
1.油揚げ 5枚を半分に切る。
2.口を開け、中を袋状にする。
3.たっぷりの熱湯をかけ、油抜きをし網に上げておく。
4.抹茶 5gは、お湯 100gで溶かしておく。
5.鍋に4、砂糖 30g、みりん 35g、白だし 23gを入れ、ひと煮立ちさせる。
6.軽く水を切った3を5に並べ、味を含ませるように煮る。
7.煮汁が少し残るくらいまで煮たら、火からおろす。
8.保存容器に入れ、味を落ち着かせる。(冷蔵庫でおよそ一晩)
9.かために炊き上げたお米2合を酢飯にする。
10.10等分に握っておく。(1個当たり65g)
11.8の油揚げを内側に折り10を入れる。
12.薄切りにした かまぼこ と海苔でデコパーツを準備する。
13.12を使って11を飾る。くっつきにくい時は、マヨネーズを糊代わりに使うと良い。
14.できあがり。『カエルさん顔色悪いですよ。』『天然色なんで』

生姜の絞り汁 大さじ1
1.油揚げの上に箸を転がし、内側を離れやすくする。横半分に切って、袋状にひらく。破れないように注意する。
2.鍋に湯を沸かして油揚げを入れ、落とし蓋をして3分ほど茹でて油抜きをする。粗熱をとり、ぎゅっと絞って水気を切る。
3.鍋に煮汁の材料を入れて火にかけ、煮立ったら(2)を入れる。落とし蓋をして弱火で15〜20分煮る。
4.煮汁が半分ほどになったら火を止めて、そのまま粗熱をとる。
5.フライパンに合挽き肉と酒を入れて火にかけ、合挽き肉をほぐしながら炒める。色が変わってきたらしょうゆとみりんを加えて炒める。汁気がなくなってきたら火を止めて、生姜の絞り汁を加えてひと混ぜする。
6.かために炊いたごはんを大さじ1だけ取り置き、4等分してラップに包み、小さいボール状にしておく。残りのごはんに(5)を加えて混ぜ、8等分して俵型に握る。
7.(4)を4枚取り出して(6)を詰め、口は開ける。

9.残った(4)の2枚のうち、1枚は三角形に切って耳を作る。もう1は縦に4等分に切り、くるくると巻いてしっぽ状にする。それぞれを(7)と(8)につける。

SHIBA INARI SUSHI
10 pieces
INGREDIENTS
5 flat fried tofu (aburaage)
300 grams (2 cups) hard-cooked rice
Nori seaweed
Broth
300 milliliters (1¼ cups) dashi stock
4 tablespoons soy sauce
2 tablespoons brown sugar
2 tablespoons mirin
2 tablespoons sake
Seasoned Mince
150 grams (5.3 ounces) beef and pork mince
50 milliliters (¼ cup) sake
2 tablespoons soy sauce
1 tablespoon mirin
1 tablespoon ginger juice
PREPARATION
1.Separate layers inside fried tofu by rolling chopstick on top. Cut into halves. Carefully open tofu from cut side to make pouches.
2.Parboil 3 minutes to remove excess oil, drain, and pat dry.
3.Combine dashi stock, soy sauce, brown sugar and sake a pot bring to a boil. Place fried tofu in the broth. Top with a small lid directly on fried tofu and simmer for 20 minutes to reduce liquid to half volume. Let cool.
4.Cook beef and pork mince in a pan with sake until it gets brown. Add soy sauce and mirin, simmer until the liquid is almost gone. Then pour ginger juice and stir.
5.Leave 1 tablespoon white rice and divide rice into quarters. Make small balls for shiba mouth.
6.Mix remaining rice and seasoned mince. Divide them into eight equal parts.
7.Shape rice into cylinders with your hands.
8.Stuff the rice carefully into tofu pocket and fold the edge to show the rice surface.
9.Cut 1 sheet fried tofu triangle for ears.Cut the other sheet lengthwise into fourths and twist it for tail.
10.Put small rice ball and place cutout nori on the rice ball to look like shiba dog.
11.Enjoy!
