It was a warm October morning.
I was sitting in the courtroom, for a trial on drug trafficking.
It had been over a decade since I stepped into the state courts.
Never thought I would be here again because of Stephy.
I had warned Stephy's mum after reading Stephy's Bazi.
That she would face imprisonment danger, physical and/or emotional, when she hit 30 years old onwards.
Her mum told me to tell Stephy, saying that she would listen to me.
I doubted so. I knew Stephy's character. Also I didn't have her number. Lame I know.
Turned out Stephy's mum did tell her after all.
But in typical Stephy's fashion, she brushed it off as nothing serious.
EVERYBODY knows not to commit crime, right?
I wasn't the only practitioner that forewarned her. Another did, when Stephy was her early 20s.

One day, her friends approached her. Selling her on the great money drug traffickers made
She just had to bring some ice and erimin across the Causeway.
Once she cleared Customs successfully, all would be well.
She would receive S$700-1000, depending on the type of drug she smuggled.
Stephy fell for it, with no thoughts of the consequences. She didn't think it was possible for her to be caught.
Stephy had family who were once drug addicts.
Who cares if drugs rob people of their sanity and loved ones...
The money she could made was so blinding that her conscience was muffled.
On her second attempt at smuggling, the Singapore taxi that Stephy rode was stopped at the customs.
It was mandatory that all cars going into Singapore at the Woodlands checkpoint would be checked.
Fear pumped through Stephy's veins, as the customs opened her taxi's door.
The paper bag she casually placed on the seat was taken by the young customs officer.
Stephy wasn't expecting that. She didn't even attempt to hide the bag as she was in a hurry and very near to the Customs, when she collected the drugs to smuggle.
"Miss, what are these?"

Stephy's mum spent about $7000 to engage a lawyer to defend for her.
I asked why spent the money, when we all know there was no ground for Stephy to win the case.
Her mum said, "So that Stephy will know her family still cares for her."
During the rest period, I saw Stephy's lawyer going over to plead with the prosecutor lawyer, for a lighter sentence.
But the prosecutor did not budge.
"She is old enough to know this would happen."
When the judge announced her imprisonment of 7 years, Stephy sobbed and fell into a slump. The female police officer grabbed onto her arm to help her up.
After they took her away from the courtroom, I asked to speak to Stephy.
I could never forget the pair of bloodshot teary eyes I saw over the bars...
The remorse, the bewilderment, the anger, the terror, the confusion...
My heart ached as she was taken away in handcuffs.
Before Stephy was caught, she had bought a plane ticket to Australia. She had wanted to continue her drug trafficking activities there. #moremoney
I am thankful that she was caught in time. Just a few grams more of drugs and Stephy could have been sent to the gallows...

During her jail term, every time when I spoke to Stephy's parents, her 70-year father would cry and asked how such a fate could befall on his most doted daughter.
I knew their family history.
I wanted to explain the law of karma to him, but I couldn't bring myself to when I saw him wiping his tears with his handkerchief.
Stephy got to work in the Prison by answering calls. One of the joys in her jail term was making enough money to buy little bottles of Yakult and chocolate
3 years and 8 months in jail later, Stephy finished her home detention last November.
Life while locked up was dreadful. There were a lot of rules to abide.
"It was an eye-opener to meet all kind of people that we wouldn't meet outside. It's an environment of survival & holding onto the hope of release day."
I asked her how life was after release.
She said,
"Life is great, initial period had to adapt after being away for so long. It took about 6 months to get use to outside completely, although some things still seemed strange. It was great to smell fresh air & to be able to see greens.
The smell of freedom is simply wonderful."
Stephy only had one wish for the new year.
Being an ex-inmate brought shame to her at times.
"I hope I found a good job & can rebuild my life again. It's not easy but it's a hope."
"It is a waste of time to be inside jail & to be away from everything. It is the loss of freedom & fear of not knowing what will happen when returned to society. And the fear of not knowing if the past will haunt your future."

There are times I would ask if I did the right thing after reading a Bazi.
Should I have emphasised the bad predictions, so that the client will be more aware and alert?
Or was I right to just mention it as a-matter-of-fact thing?
Everybody wishes to know more about their destinies but very few people want to change it.
I apologised to Stephy for not telling her personally about her imprisonment fate.
Despite being thought of as straightforward, I still find it difficult to articulate certain truths to clients.
Shifu often tell me to choose saying the complete truth, over saying only nice predictions.
"Don't sacrifice the truth, just because you want your clients to like you more and continue engaging you."
I was just an apprentice when I analysed Stephy's Bazi.
When I heard of her arrest, I took out her Bazi to understand the why, what, when and how behind her arrest. I wasn't sure she would get to tell me her whole story.
I know money is very attractive to many.
Some of us would do a lot to make good money, risking our health, freedom and even family time.
We have mouths to feed. We have bills to pay. We want to do more while we are still young.
Cutting back on spending is easier said than done, for there are expenses that are compulsory to keep the whole household running and alive.
While you can avoid buying new clothes for yourself, your children had outgrown their school uniforms and the schools are always asking for money for this and that.

Whipped cream or ice cream filling is really good. It adds vanilla flavor and sweetness. Makes it moist and super delicious. Must try!
French Crullers are the top-selling donut at Mister Donut (donut shop) in Japan. Simple sugar glaze is my kids' favorite but in this video they ended up playing with the cream 😅

2-Ingredient French Crullers
Difficulty: Very Easy
Time: 15min
Number of servings: 3 (3-Inch-round 1.5-Inch-height)
Ingredients:
160g (5.6oz.) Tempura flour https://amzn.to/3BXYIMp
4 tbsp. mayonnaise https://amzn.to/3yTRmHX
100ml water
deep frying oil
powdered sugar (confectioner's sugar)
whipped cream
Directions:
1. Put Tempura flour, mayonnaise, and 100ml water in a bowl and mix well with a spatula.
2. Transfer the batter into a pastry bag fitted with a large (0.6inch) star tip (Do NOT use a round tip or the batter will explode!!!). Pipe out 2 layers of rings onto a parchment paper.
3. Deep fry in oil at 180C (350F) until crisp golden brown.
4. Dust with powdered sugar or drizzle with sugar glaze (mix 3 tbsp. powdered sugar & 1 tsp. water). You can slice and place whipped cream or ice cream between the layers if you like!
I haven't tried but I think you can bake in oven at 180C (350F) for 15 minutes.

ミニチュアキッチンタオル作ってみた!
みなさんこんにちは!
前回までにミニチュアの食器用洗剤とスポンジホルダーを作ってきた流れをそのままに、今回もキッチン関連のミニチュアを作りました。今回作ったのはミニチュアキッチンタオルです。ちょっとした汚れを拭いたり油を吸わせたりと活躍の場が多いアイテムのひとつではないでしょうか。
箱タイプのものとロールタイプのもので迷ったのですが、箱は昔作ったティッシュに近いので、今回は箱ではなくまだ作ったことがないロールタイプのものにしました。
ミニチュアキッチンタオルが予想よりも早く作れたので、ついでにキッチンタオルホルダーのミニチュアも作ってミニチュアハウスに設置してみましたので、そちらも是非ご覧ください。

濃厚美味しい本格ティラミスの作り方
本格的な感じで作りますが、簡単お手軽な作り方も紹介しています
市販のビスケットでインスタントコーヒーを使い、卵黄なしでも作れますのでぜひ~
【材料】
サヴォイアルディ(市販のビスケットで代用可)
・卵黄 2個
・グラニュー糖(卵黄用) 15g
・卵白 2個
・グラニュー糖(卵白用) 30g
・薄力粉 50g
・粉糖 適量
ザバイオーネ
・卵黄 2個
・グラニュー糖 25g
・マルサラ酒(甘口) 40g
(ラム酒やアマレットなど他の洋酒でもOK)
ザバイオーネ・クリーム
・マスカルポーネチーズ 200g
・グラニュー糖 50g
・ホワイトチョコ(お好み) 20g
・ザバイオーネ 全量
・マルサラ酒 お好みの量
・生クリーム 150g
エスプレッソ液
・エスプレッソ(濃いめのインスタントやドリップコーヒーで代用可)
・グラニュー糖 お好みの量
・マルサラ酒 お好みの量
仕上げ
・ココアパウダーやコーヒーパウダー 適量
【準備】
・粉糖、薄力粉はふるって使う
・オーブンを180℃に予熱する
・クリームを作る少し前にマスカルポーネを常温に出しておく
【作り方】
1. 【サヴォイアルディ/180℃に予熱】ボウルに卵黄2個・グラニュー糖15gを泡立て器ですり混ぜる
2. 別のボウルに卵白2個を入れて白っぽくなるまで泡だて、グラニュー糖30gのうち半分を入れて泡立てる
3. ツヤが出てきたら残りのグラニュー糖を加え、角が立つまで泡立てメレンゲを作る
4. 卵黄の方にメレンゲの半量を入れてざっと馴染むまで混ぜ、薄力粉50gをふるい入れる
5. ヘラに持ち替えて粉っぽさが無くなる直前くらいまでさっくり切り混ぜ、残りのメレンゲを加える
6. あまり泡を潰さないように切り混ぜ、なめらかに混ざったら丸口金をつけた絞り袋に入れる
7. オーブン用シートを敷いた天板に棒状に絞り出し、粉糖を全体にふるいかけ、消えた頃にもう1回粉糖をふるいかける
8. 180℃に予熱したオーブンで20~25分を目安に、軽く色づくまで焼いて冷ましておく
9. 【ザバイオーネ】ボウルに卵黄2個・グラニュー糖25g・マルサラ酒40gを合わせて混ぜる
10. 鍋で加熱した沸騰しないくらいのお湯で湯煎にかけ、混ぜながら70℃程度まで温める(より殺菌を意識するなら80℃)
11. 温度が上がると泡が消えとろみつく、湯煎から外し好みでふんわり泡立ててもOK
12. 【ザバイオーネ・クリーム】ボウルにマスカルポーネチーズ200gをほぐし、グラニュー糖50gをすり混ぜる
13. 溶かしたホワイトチョコ20g・ザバイオーネをなめらかに混ぜ、好みでマルサラ酒も加え混ぜる
14. 生クリーム150gを軽く角が立つまで泡だて、↑に半量ずつ加えてなめらかに切り混ぜる
15. 【エスプレッソ液】エスプレッソor濃い目に作ったコーヒーに、好みでグラニュー糖・マルサラ酒を混ぜておく
16. 【仕上げ】容器にサヴォイアルディ(ビスケット)を敷き、エスプレッソ液を染み込ませる(もしくは染み込ませてから容器に入れる)
17. ザバイオーネ・クリームを入れて均し、エスプレッソ液を染み込ませたサヴォイアルディ→ザバイオーネ・クリームと重ねていく
18. 冷蔵庫で冷やし固め、仕上げにココアパウダーやコーヒーパウダーをふるいかけて出来上がり

・Marusara Sake (sweet) 40 g
(You can also use other foreign liquors such as rum or amaretto.)
Sabaione Cream
・Mascarpone cheese 200 g
・Granulated sugar 50 g
・White chocolate (optional) 20 g
・Sabaione total amount
・Marsala Sake, as much as you like
・Heavy cream 150 g
espresso solution
・Espresso (strong instant or drip coffee can be substituted)
・Granulated sugar as much as you like
・Marsala Sake, as much as you like
Finish
・Appropriate amount of cocoa powder or coffee powder
[How to make]
1. [Savoie Hardy/Preheat to 180 °C] Mix 2 egg yolks and 15 g of granulated sugar with a whisk.
2. Add 2 egg whites in a different bowl and whip it until it becomes whitish. Add half of 30 g of granulated sugar and whip it.
3. Add the rest of the granulated sugar when it glazes. Whip it until it peaks to make a meringue.
4. Add half of the meringue to the egg yolk and mix it until it blends in. Sift in 50 g of weak flour.
5. Switch to a spatula and lightly mix it until the powdery feel is gone. Add the rest of the meringue.
6. Mix it so it doesn't crush the bubbles too much. Add it in a piping bag with a round cap when it mixes smoothly.
7. Squeeze it out into a stick shape on a baking sheet covered with baking paper. Sift the powdered sugar entirely. Sift it once again when it disappears.
8.Bake it in the oven preheated to 180 °C for around 20 to 25 minutes until it lightly browns then let it cool.
9. [The Baione] Mix 2 egg yolks, 25 g of granulated sugar, and 40 g of marsala sake in a bowl.
10. Boil it in hot water heated in a pot until it doesn't boil. Warm it to around 70 °C as you mix it (80 °C if you want to sterilize more).
11. The bubbles will disappear and thicken when the temperature rises. You can remove it from the hot water and whip it softly if you'd like.
12. [The Baione Cream] Loosen 200 g of mascarpone cheese in a bowl and mix in 50 g of granulated sugar.
13. Mix 20 g of melted white chocolate and zabaione smoothly. Add marsala sake if you'd like and mix it.
14. Whisk 150 g of whipped cream until it lightly forms peaks. Add half of it at a time to ↑ and mix it smoothly.
15. [Espresso liquid] Mix granulated sugar and marsala sake to your liking with espresso or strong coffee.
16. [Finish] Lay out the savoie aldi (biscuit) in the container and let it soak in the espresso liquid (or let it soak then put it in the container).
17. Add the Xabione cream and flatten it. Layer it with Savoiardi soaked with espresso then Xabione cream.
18. Chill it in the fridge to harden it. Finish it off by sifting cocoa powder or coffee powder and it will be complete.
