前幾天在百忙之中,為自己訂了一個 Pierre Hermé 與 Cédric Grolet 兩位主廚的四手聯彈作品——「Noisette Citron」(榛果-檸檬),明明幾乎連睡覺都沒時間了,卻還是出了門一趟,將這朵可愛的小花領回家。
說老實話,原本光是看造型與組成,我其實沒有太大興趣。對巴黎人來說,使用「biscuit macaron」(馬卡龍海綿蛋糕)當成底座、再加上內餡大概很新奇,但對台灣消費者來說,其實就是熟悉的「dacquoise」#達克瓦茲蛋糕;榛果與檸檬的搭配也不算特殊、小花造型也幾乎是 Cédric Grolet Opéra 店中商品的招牌。沒想到兩位主廚果然還是功力深厚,檸檬奶餡(crème citron)清新怡人、酸甜適中,其中的檸檬果凍(gélé citron)、糖漬檸檬皮(citron semi-confit)與檸檬果肉(chair de citron)非常爽口,搭配濃醇卻絲毫不厚重的榛果焦糖牛奶醬(confiture de lait à la noisette)與外表乾鬆、內裡稍稍黏牙的榛果馬卡龍海綿蛋糕(biscuit macaron à la noisette),像是在初秋閃耀的陽光,微涼、金黃,在穩重中還記憶著一抹夏季的酸爽。

Had a little treat for myself the other day. The “Noisette-Citron” created by Pierre Hermé and Cédric Grolet, two of the best pâtissiers in the world, is a lovely lady that has consoled me with her tenderness. The composition is nothing impressive with the “biscuit macaron à la noisette” (a hazelnut dacquoise biscuit in fact) as the base and crème citron (lemon cream) as the filling. Pastry and dessert connoisseurs wouldn’t be surprised as the Japanese dacquoise-based cakes are way too common there, but for the sweet tooth in Paris, this could be something interesting. However, the delicate match between hazelnut and lemon is outstanding. Every component is in its place and at its best. Nothing is too much or too little. A wonderful harmony that could only be achieved by a master (or in this case, two masters).

■材料(20〜25個分)
・卵白 2個分
・粉糖 100g
・バニラオイル 3滴
【A】
・薄力粉 15g
・ココア(無糖) 20g
・ココナッツ(ファイン) 50g
・マカデミアナッツ(細かく刻んだもの) 50g
・チョコチップ 40g
■手順
(下準備)オーブンを140℃に予熱しておく。
1. ココナッツ(ファイン)は細かく刻む。【A】の粉類を合わせてふるう。
2. 天板に「クックパー®︎クッキングシート」を敷く。
3. 卵白をボウルに入れ、底を氷水に当てながらハンドミキサーで6分立てにする。粉糖を2回に分けて入れ、そのつど混ぜる。ツヤが出てピンとした角が立つまで混ぜる。
4. 3にバニラオイルを加え、1の粉類を3回に分けて入れ、そのつどゴムべらでさっくり混ぜる。刻んだココナッツと、マカデミアナッツ、チョコチップも入れて、さっくりと混ぜる。
5. 「クックパー®︎」を敷いた天板に4の生地をスプーンで落とし、140℃に予熱した電気オーブンで約30分(ガスオーブンの場合は130℃に予熱して同時間)焼く。
Point:生地はなるべく同じ大きさに成形して天板に落としましょう
6. 焼き上がったら、そのまま庫内で10分ほどおいて乾燥させてから取り出し、金網などの上で冷ます。
Point:「クックパー®︎クッキングシート」にクッキーをのせて包み、両端をねじるとキャンディ包みのラッピングに♪
※時間の経過でクッキーの食感が変わる場合があります。なるべく早めにお召し上がりください

65g egg white
70g granulated sugar
Food coloring
70g almond flour
70g powdered sugar
150℃ 13 min. small macaroons
24 min. large macaroons
➢Crème à la rose
2 egg whites
100g granulated sugar
230g unsalted butter
Rose aroma and essence
*Need to adjust the amount.
2 egg yolks
40g granulated sugar
100g milk
➢Fruits
18 strawberries
Raspberries, pomegranates, etc.
1) 3:22
・Macaron
Warm up the egg white and granulated sugar at 50 ° C and add the food colouring to make a meringue.
2) 4:31
Add the grind almonds from 1) and powdered sugar, then mix it with a rubber spatula.
Mix until just before the traces of dropping the dough disappear slowly.
3) 5:31
Fill a pastry bag with 2) and squeeze the dough into a 15 cm circle. Make small macaroons with the remaining dough.

Piled up two oven plates. Bake at 150 ° C for small macaroons for 13 minutes and 150 ° C for large macaroons for 24 minutes.

Warm up the egg white and granulated sugar to 50 ° C to make a meringue.
Microwave the unsalted butter to about 25 ° C and add the aroma of the rose.
I added 1 tablespoon of aroma in the video, but adjust the amount depending on the manufacturer and type.

Add slightly warm milk to a mixture of egg yolk and granulated sugar and return to the pot.
Heat to 80 ° C while mixing the bottom of the pot well, and whisk with an electric whipper.

Add 6) to unsalted butter little by little, mix well, and add the meringue.
* Please note that butter and 6) will separate if it’s cold.

Assemble with macaron, cream and strawberries.
Macaroons become moist when put in the refrigerator for about half a day to keep them from drying. Harden the remaining cream in a container with strawberries. If you cool the cream down in the refrigerator and then reheat it, the bubbles will disappear and the cream will not melt in your mouth.

* The result of baking may be changed depending on each oven at home. The temperature and the baking time in this recipe is only a guide.
