韓式燉牛小排Galbijjim (Braised Beef Short Ribs)
那天,我在ig上傳韓國外帶餐,一桌滿滿地看起來很好吃,但我沒有秀出來的是,那一碗牛小排湯,天啊,肉硬到陶先生要用兩手用力拉才咬的斷!!!而且老實說,目前在布里斯本這麼多韓國餐廳裡,好吃又嫩的燉牛小排,10家看看有沒有1家,真的很難吃到好吃的。
而我自從10年前我開始學做韓國料理以來,這一道燉牛小排是我每次都會失敗的料理。前後我試了很多韓國正宗的教學食譜,我總覺得不好吃,不是太乾、就是太柴,不然就是不夠入味。正宗的做法加了很多料,還有把牛肉先泡水讓血水清乾,不然就是先將牛肉用水燙過,搞工就算了,我就是覺得不好吃。
所以,我決定用我自己的做法,結果!!!!! 太好吃了!!!尤其是我異想天開加了無花果,讓湯汁有自然的甜味,而不像傳統那樣加了半杯糖,之後還給你來淋上玉米糖漿,超級無敵不健康!而且有了無花果的水果酵素,肉質變得超級嫩的!整個做法超簡單的,你們快去試試。
【食材】
牛小排1.8公斤
白蘿蔔 半條
紅蘿蔔 兩條
乾香菇數朵 (先用2~3杯熱水,泡30分鐘)
無花果 兩顆 (無可、或用木瓜皮、水梨或蘋果代替)
洋蔥一顆
薑末兩大匙
蒜8顆
綠辣椒 兩條
【調味】
醬油1/3杯
味醂 1/4杯
木糖醇 2大匙 (可用糖、楓糖或蜂蜜代替)
水一杯
香菇水兩杯
Galbijjim (Braised Beef Short Ribs)
Well, I had tried various traditional Korean version of Galbijjim, so far, I could not find one that I actually like. So, I decided to invent my much healthier and yummier version of it. I hope you give a try and hope you enjoy it.
【Ingredients】
Beef short ribs 1.8kg
Dried shiitake mushrooms (soak 2.5 cups hot water for 30 mins)
Daikon Radish 1/2
Carrots x 2
Fig x 2
Onion x 1
minced ginger 2 tbsp
garlic x 8
green chilli x 2
【調味】
2 cups of soaked mushroom water
soy sauce 1/3 cup
mirin 1/4 cup
xylitol 2 tbsp (or sugar, maple syrup, honey)
water 1 cup

In preparation for father's day here's something special for you!
Also commonly known as Galbijjim, this recipe stands for braised beef short ribs. It is so full of flavor, and will be well worth the time put in. Make sure to soak the dried mushrooms overnight the day before cooking. Wash up the ribs and have them soaked to remove any trace of excess blood.
Add a few sachets of Cheong Kwan Jang Korean Red Ginseng Extract Everytime Balance for the added ginseng flavour and mix it evenly, do add based on personal taste preferences.

Recipe Tip: To retain the active components and health benefits of Korean red ginseng, it is recommended not to subject Korean red ginseng products to direct heat or temperatures above 80°C.

食材:
牛肋骨beef short ribs 大約八塊/2.5磅
洋蔥 半顆 (食物處理機)因為我不愛吃洋蔥,直接打成汁
白蘿蔔半顆
紅蘿蔔和白蘿蔔比例一樣
梨子 半顆(攪拌到食物處理機)沒有也沒關係,直接燉
大蒜約十顆(食物處理機)
薑片少許(過水牛肋骨和食物處理機)
白段蔥 一把(最後收汁用)
年糕(可有可無,最後收汁炒)
金針菇 一包 (可有可無)
醬油 六湯匙
糖或corn syrup 一湯匙半
米淋 四湯匙
黑胡椒約 一湯匙
水 兩杯
放到食物處理機的料:
洋蔥
梨子
大蒜
薑
醬油
糖
米淋
作法:
牛肋骨需要先清洗掉血水泡上半小時,再鍋子裡放薑片過水。
同時可以開始做醬料,放到食物處理機,沒有的話可以直接燉。
所有料放入鍋中壓力40分鐘(慢鍋大約兩個半小時到三小時)
最後把燉好的湯汁倒入炒鍋中收汁炒年糕和其他料,大火煮湯汁,開始濃稠後再加入料和黑胡椒和白段蔥。
全部再倒回鍋子中就完成了。
