Maisen’s Katsu Sandos and Suntory’s Premium Malt’s Beer goes hand-in-hand.
We visited the Musashino Brewery and learned about the history and craftsmanship behind Suntory’s Premium Malt’s Beer. A few fun facts:
1. Only the highest quality natural water is used at Suntory’s breweries which makes sense as beer is nearly made up of 90% water!
2. Premium Malt’s Beer only uses Diamond Malt which contains a high concentration of “umami” flavor components. The tough structure of the malt means more time and effort is required to fully extract its flavor. The malt must be boiled twice in mash kettles using a double decoction process resulting in its rich flavor.
3. European hops from the Czech Republic are added to create the perfect aroma. This brewing process took almost 10 years of research to develop.
4. Suntory’s Premium Malt’s beer is prized for having flawless foam, consisting of tiny creamy bubbles. Every pour must be topped off with 30% foam that Japanese consumers look for.
